Homemade Magic Shell Recipe – Only TWO Ingredients!

Did you know that you can make Homemade Magic Shell? It is super easy and tastes really good! I started using a lot more coconut oil for the health benefits and saw this recipe on the back of a jar one time.

I usually get coconut oil from the grocery store or Walmart, but you can always order it HERE.  Once all melted and stirred together, you just need to store it in an air tight container! Easy!

Homemade Magic Shell Recipe

INGREDIENTS

  • ⅔ cup Semi Sweet Chocolate Chips
  • ⅓ cup Coconut Oil

DIRECTIONS

  1. If you do not want to use coconut oil, you can substitute vegetable oil or butter.
  2. Melt ingredients by heating in microwave for 30 seconds and stirring and repeating until melted and smooth.
  3. Once melted, you can transfer to mason jar.
  4. Can be stored in air tight jar for up to 1 month.

Icebox Cake

Sometimes you just want a quick and easy dessert without heating up the kitchen to bake, right?  Icebox cake is a tried and true classic recipe that will be perfect to accomplish that goal!  If you’ve never tried an Icebox cake, you have to plan to make it this week!  Seriously!  The trick is that the cookies soften with time by the moisture of the other ingredients and it really tastes like cake!  Well, cake plus creamy and fruity deliciousness!

PRO TIPS:

Any type of fruit can be used on this icebox cake. You can also add instant vanilla pudding in between the layers OR mix in some cream cheese if you’d like to take it up a notch.  If you don’t have graham crackers just substitute something like vanilla wafers or another sugary type cookie.  The end results will still be amazing, trust me! Icebox Cake Recipe

INGREDIENTS

  • 3 ½ cups very cold heavy whipping cream
  • ½ cup powdered sugar
  • 2 teaspoons vanilla extract
  • Graham crackers
  • 4 cups – fresh fruit – strawberries, blueberries, red raspberries and blackberries, or any combination you like

DIRECTIONS

  1. Place mixing bowl in freezer about 30 min before using to chill
  2. While mixing bowl is chilling, prepare fruit by cleaning and slicing strawberries
  3. In a large mixing bowl, beat heavy whipping cream, powdered sugar and vanilla until stiff peaks form
  4. Divide whipping cream mixture into fourths 
  5. Spread a small spoonful of cream on bottom of pan evenly
  6. Add graham crackers, trim crackers to fit if necessary 
  7. Spread ¼ of the whipping cream mixture on top of the graham crackers
  8. Add ⅓ of the fruit on top of the whipping cream 
  9. Optional but helpful to level the crackers – Add a small amount of whip cream on top of the fruit to level it. 
  10. Add another layer of graham crackers, pressing down gently into the cream
  11. Then repeat layers, finishing the cream on top 
  12. Cover and refrigerate overnight
  13. Garnish with additional fruit if you like
  14. Serve chilled
  15. Store leftovers in the refrigerator

Air Fryer Buffalo Cauliflower Recipe

Do you have an air fryer yet?  Have you tried one? I finally gave in and purchased an Air Fryer after hearing over and over again about how amazing they are!  Air Fryer Buffalo cauliflower is one of the first things we made with it (Actually, Avery made them and did an amazing job!), and I just HAVE to share the recipe with you.  These things are so good!  You can use any favorite buffalo wing sauce you like and just a few other ingredients to whip them up pretty quickly.

Yes, these are super healthy and go right along with a vegan diet as well.  BUT…even meat lovers will enjoy these as a wonderful side dish.   Oh, don’t forget the ranch or Bleu Cheese dressing on the side & maybe some celery too!

What would you serve these with?  They would go great alone as a snack/appetizer or joined up with a protein.   Add a salad & some burgers or veggie burgers to round out the whole meal.

Which Air Fryer Do I Have?? Keep Reading!

Several of you have asked which air fryer I bought.  I ended up getting the Breville Smart Oven and LOVE IT so far!! It makes healthier meal prep so much easier and less greasy and just so good! Also, as a big bonus, I loved the fact that it has huge capacity for our big family, and it does so many other things besides air fry.  I am all about consolidating appliances to save counter & shelf space for sure!

I got mine from Amazon here, but it looks like it’s no longer available.  You can get it HERE from Williams & Sonoma though!   It’s really cool because it’s also a regular oven & dehydrator, etc.  You can fit a whole turkey in this bad boy!

If you just want an air fryer without all the bells & whistles though, try the Ninja Air Fryer for only $99 or the Dash Compact Air Fryer if you are cooking for 1 or 2 people!

Air Fryer Buffalo Cauliflower

Air Fryer Buffalo Cauliflower

This recipe is quick, easy, and so delicious!  

Serves 5-6 

Prep Time 5-10 minutes

Cook Time 12-15 minutes

INGREDIENTS

  • 4 cups cauliflower florets
  • 4 tablespoons butter, melted
  • 1 tablespoon olive oil
  • ½ cup buffalo sauce
  • 1 cup bread crumbs
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper

DIRECTIONS

  1. In a large bowl whisk together butter and buffalo sauce.
  2. Add in the cauliflower florets. 
  3. Toss until well coated.
  4. Combine bread crumbs and seasonings in a separate large bowl.
  5. Transfer the cauliflower to the bread crumb mixture and toss again to coat well.
  6. Set the air fryer to 350 F and spread olive oil on to the basket. 
  7. Put half of the cauliflower in the air fryer basket.
  8. Cook for 12-15 minutes or until cauliflower is golden brown and cooked through, but not mushy.
  9. Cook the rest of the prepped cauliflower the same way and serve with ranch and celery sticks.

With warm weather heating up, I (Paul here) wanted to share this Southwest Grilled Corn Recipe – it’s so easy and delicious!  It would go great alongside Tiffany’s Perfect Pesto Grilled Flank Steak and a big sliced baked potato….

Southwest Grilled Corn Recipe

What you need:

  • For this recipe, you’ll need a grill (I love my Traeger, but really you could be using most any grill and still turn out some awesome corn).
  • Corn on the cob that you’ve shucked already (good job for the kids to do while you’re getting the charcoal hot)
  • Butter
  • Tajin or Lawry’s Seasoned Salt (not both) and Parmesan cheese
  • Optional: Lime slices and chopped cilantro for garnish

If you’re not sure what Tajin seasoning is – it’s a mix of ground chile peppers, salt and dehydrated lime juice that gives a great kick to corn.  You can find it here or in the International Aisle at most groceries.

Between the Tajin and the Parmesan cheese – your regular grilled corn gets a little Southwestern kick.  If you want to take it a step further, serve it with some lime slices and chopped cilantro!

Directions for Southwest Grilled Corn:

  1. Shuck the corn and throw it on the grill for about 5 minutes so it gets a little toasted.
  2. Pull it off and cover it in butter, seasoned salt (or Tajin) and Parmesan Cheese.  Go with your best judgement on how much to use.
  3. Wrap tightly in foil and place on the grill in a spot away from the hottest part (where the meat would go).  Try to find a medium hot spot  – or use that handy vegetable tray if your grill has one.
  4. Let it roast for 15-20 minutes until done, don’t leave it on too long or it will dry out.

Zucchini Ham Frittata Recipe

I just love one dish recipes, and this Zucchini Ham Frittata is definitely a great one.  You can add a salad and some rolls to round it out a bit if you’d like. Frittatas are also great way to get those veggies in.  If you don’t have zucchini or just don’t like it you can substitute the zucchini for broccoli or spinach or another green veggie that suits your fancy just make sure they are cooked tender before you add the other ingredients.

This zucchini ham frittata works great as a side dish too, just omit the ham (or not).

Zucchini Ham Frittata

This recipe can be made with or without the ham. 

INGREDIENTS

  • 3 to 4 zucchini, cubed
  • 1 tablespoon butter
  • 1 small white onion, diced
  • 6 large eggs
  • 2 tablespoons milk
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup cooked ham, cubed
  • 1 cup shredded cheddar cheese

DIRECTIONS

  1. In a large (12 inch), non-stick skillet over medium-high heat, melt the butter. Add the zucchini and onion. Cook, stirring often, until the zucchini and onion are softened. 
  2. Stir in the ham and heat through. Drain off any liquid.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  4. Pour the egg mixture evenly over the ham and vegetables. Cover the skillet and reduce heat to low.
  5. Cook until the eggs are set and begin to puff in the middle of the pan. Remove from heat.
  6. Top with the cheese and cover until the cheese has melted.

Twix Brownies Recipe

Ok so this is a little embarrassing posting my Twix Brownies recipe, because it is simply a box brownie mix and some wrapped chocolate candy. Because it isn’t really a recipe, but maybe instructions? If you enjoy biting into the yummy caramel goodness that is a Twix you are going to LOVE this one though.  It is chocolatey and caramelly (is that a word?) and just oh so good!  Did I also mention it is super rich?!

This Twix Brownies recipe is also one where you can definitely include the kids.  Just make sure they don’t eat all the Twix bars before you’re done! 😉  I just LOVE quick and easy recipes like this one where you can wow the family with just a few ingredients and little prep.

These Twix Brownies basically follow the instructions on a box of brownies (your choice, any brand will do). Or you could get totally crazy and make some brownies from scratch.  Here’s a great homemade option for Triple Chocolate Brownies!

Once you mix up the brownie batter, pour half the brownie batter into a pan. Then go ahead and unwrap the Twix bars and place them in the batter. I added chocolate chips just because I was feeling a little wild. 🙂 You could also add nuts if you wanted.

Then pour the remaining batter over the Twix bars and bake according to the instructions on the box — s0 easy. You can top with a few chopped up Twix bars if you want or add them all in the batter. Obviously you can use ANY wrapped candy bar!  Maybe try this with Snickers or even a Baby Ruth or Almond Joy!

Did you all know that Easter is NEXT WEEK?! It has kind of snuck up on us over here, but I am trying to get everything together to make it a memorable one for the kids.  I just know that these yummy surprise cupcakes will help with that.  Who would not want to taste the yummy caramel goodness of a Cadbury Caramel Egg after biting into a chocolate cupcake? This recipe is one of those that looks complicated, but is just so easy to do!  You will need to find some Cadbury Caramel Eggs to make this happen, but hopefully they are still around in stores right now.  If not you can always substitute for another brand.  Find out how to make this deliciousness happen in the recipe below.

Hidden Cadbury Caramel Egg Cupcakes for Easter

Makes 10 hidden egg cupcakes with batter leftover for additional cupcakes (You could make 15 to 20 hidden egg cupcakes total with one cake mix.)

INGREDIENTS

  • 1 box Devil’s Food cake mix with ingredients for making the cake (or your favorite chocolate cake recipe)
  • About 4 cups frosting in three colors (Used Pillsbury Funfetti frosting in pink, purple, and yellow)
  • 10 Cadbury Caramel Eggs, frozen
  • 10 mini Cadbury Caramel Eggs
  • Sprinkles, if desired

DIRECTIONS

  1. Preheat oven to 350 degrees. Prepare a cupcake pan with liners. Spritz with nonstick cooking spray.
  2. In a mixing bowl, beat together the cake mix and ingredients for making cake.
  3. Using a large scoop, divide the batter between the cupcake liners.
  4. Place one, unwrapped, frozen Cadbury Egg in the middle of each cupcake liner.
  5. Bake cupcakes for 15 to 18 minutes or until a toothpick inserted to the sides of the egg comes out clean. (Do not pierce through the center where the egg is.)
  6. Allow cupcakes to cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
  7. Place the frosting in three different piping bags. Snip the tip from the piping bags and place all three piping bags in a larger piping bag fitted with an open star piping tip.
  8. Pipe frosting from the middle of each cupcake to the outer edge and back to the middle to create a peak.
  9. Press one mini Cadbury Caramel Egg into the peak of each cupcake. Decorate with sprinkles if desired.
