It finally feels like summer is here, not that it hasn’t been hot, but that we are getting mostly unpacked and the traditional summer schedule has started!
My kids are home and really enjoy helping with meals. My son who is 13 is the most interested in what we plan on having for dinner during the week. Part of the reason is the AMOUNT of food that he is eating and also that he has always been a “good eater”. Meaning, that even when he was little, he loved mushrooms, sushi, onions and other “adult food”. He takes a very active roll in planning and making dinner.
Sunday – We are spending most of the day outside with the kids, it is REALLY hot and I don’t have anything planned for dinner. I know it is a crime, but we might be having cold cereal for dinner tonight 🙂
Monday – Muflatta Sandwiches. I posted the recipe below, and am making a few tomorrow during the day. My kids and husband will pull these out of the fridge for the next few days, cut a slice off and chow down!
Tuesday – Tacos. I have frozen hamburger, taco seasoning and some tortillas that I need to use up. This is a SUPER cheap dinner and good for the summer.
Wednesday – Broiled Tilapia. FAMILY FAVORITE! If you think you do not like fish…. please give this one a try!
For the last few days of the week, I am going to try a few new recipes and post them daily. Last week when I said I was not sure what we were having a few reads sent in meal ideas and I want to try them!
