I wanted to repost this incase you missed it earlier this week.
The weekly menu plan with the list went well for me last week. Monday is my day off, so I printed the list, went shopping and had everything for the week. Paul works at home and so he was able to have each recipe and know what we were having watch night so he can get dinner started.
This Friday we get the Zaycon chicken and bacon, so Friday I am throwing chicken in the oven. We are also trying to eat less carbs so I will be digging out the higher protein recipes!
For dinner Friday after I get the chicken I am throwing 4 in a ziploc bag (2 full ones) and pouring in a free Italian Ken’s dressing from HEB. Let it marinade for a few hours and bake at 350 for about 40 minutes. The HEB sale ends on Tuesday so you have to get the dressing before then or use another kind.
MONDAY – HEB Tilapia Meal Deal – This week at HEB they have a meal deal where when you buy Tilapia you get all the above free. If you do NOT have a HEB, still try this Parmesan recipe for Tilapia. My kids LOVE it and it does not taste “fishy” at all and is REALLY good! I promise, it is a good fish recipe! For sides we will have a green salad.
TUESDAY – Roast Pork for Tacos (Crock pot Recipe) – Get your Pork Butt at Kroger for $2.49/lb (sale ends Tuesday night) toss this one in the crock pot in the morning and serve with corn tortillas, sour cream, avocado ( on sale at HEB till tuesday) cheese and pico.
WEDNESDAY – Chicken Fried Rice *EASY* – Remember earlier this week when the Sunbird Seasoning was on sale at Walmart? Well, I grabbed a few of those and we are having chicken fried rice, and I will cut up a few cantaloupe to eat with it (they are BOGO at Kroger until Tuesday night)
THURSDAY – Hearty Hamburger Soup – (Crock Pot / OR Stove Top) Also a really easy recipe that is filling and good! I will have garlic knots with this as a side.

SATURDAY – Homemade Pizza – We normally have this on Friday nights, but since I am dealing with chicken friday we can just have it then!
Broiled Tilapia Parmesan
INGREDIENTS
- 1/2 cup Parmesan cheese
- 1/4 cup butter, softened
- 3 tablespoons mayonnaise
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon onion powder
- 1/8 teaspoon celery salt
- 2 pounds tilapia fillets
DIRECTIONS
- Preheat your oven’s broiler. Grease a broiling pan or line pan with aluminum foil.
- In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
- Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.
