Ingredients

  • 1-1/2 cups uncooked spiral pasta
  • 1/2 cup mayonnaise
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried basil
  • 2 cups frozen mixed vegetables, thawed
  • 1-1/2 cups cubed cooked chicken
  • 1-1/2 cups (6 ounces) shredded cheddar cheese, divided

Directions

  • Cook noodles.
  • Combine  mayonnaise, milk, salt and basil.
  • Stir in the vegetables, chicken and 1 cup cheese.
  • Drain pasta; stir into vegetable mixture.
  • Transfer to a greased 1-1/2-qt. microwave-safe dish.
  • Sprinkle with remaining cheese.
  • Cover and microwave on high for 4-5 minutes or until heated through and the cheese is melted. Let stand for 5 minutes before serving. 
  • Yield: 4 servings.

7up Biscuit Recipe to die for! STOP. Whatever you are planning on making for dinner, if you have these 4 ingredients you HAVE to make these biscuits tonight!! I made these the other night and I am still a ROCK STAR with my family! They were AWESOME!! If you have a Popeye’s in your area, these taste just like the biscuits from that drive-through!

I could seriously eat an entire pan with butter and jelly. PLUS, you probably do NOT even to buy a single thing to make these, I bet most of you already have it all in your pantry!

7 UP (or Sierra Mist) Biscuits

2 cups Bisquick
1/2 cup sour cream
1/2 cup 7-up
1/4 cup melted butter

Cut sour cream into biscuit mix, add 7-Up. Makes a very soft dough.
Sprinkle additional biscuit mix on board or table and pat dough out. Cut biscuits into squares about 3×3. Melt 1/4 cup butter in a 9 inch square pan. Place cut biscuits in pan and bake at 450 degrees until golden brown.

Lemon BBQ Meatloaf Recipe

This is my Grandmothers recipe for Lemon BBQ Meatloaf. It is a really special recipe to me, just because she made it all the time for me when I was living with her as a teenager.  My Grandma Davis clipped it out of the local paper during World War II and has been making it since. She still has the original clipping that she reads the recipe off of, it is stained and yellowed, but it is precious to me.

This recipe was intended for you to make it as small individual meatloaves.  If I was making this for adults I would make them about the size of a large baking potato. But I double the recipe and make them about the size of a regular orange for my kids. Sometimes my husband and bigger kids have 2 each!

When I make these meatballs I cover a cookie sheet that has sides with foil to make clean up easier. I also set a wired cooling rack over the cookie sheet and put the meatballs on it so that the grease drips onto that and they don’t sit in it. It also makes clean up really easy!

When you try these the first time, DO NOT omit anything from the sauce recipe. That is what makes them so good! My husband made these one time and left out the spices because he doesn’t like them. Then he complained that it didn’t taste as good! He was surprised to know that I always put the spices in that he thought he didn’t like! 🙂

Lemon Barbeque Meatloaf

INGREDIENTS

1 1/2 pounds ground beef
1/4 cup lemon juice
1/2 cup water
1 egg, beaten
4 slices day-old bread, torn into small pieces
1/4 cup chopped onion
2 teaspoons seasoning salt
1/2 cup ketchup
1/3 cup brown sugar
1 teaspoon mustard powder
1/4 dash ground allspice
1/4 teaspoon ground cloves
6 slices lemon

DIRECTIONS

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish or a dish of similar size.

In a large bowl, mix together the ground beef, lemon juice, water, egg, bread, onion and seasoning salt until well blended. Shape into 6 individual loaves – I like to make large balls. Place them in the prepared baking dish.

Bake for 15 minutes in the preheated oven while you prepare the topping. In a small bowl, stir together the ketchup, brown sugar, mustard powder, allspice and cloves. Spoon the sauce over the loaves, then top each one with a slice of lemon. Return to the oven, and bake for an additional 30 minutes, or until cooked through.

Weekly Menu Plan 6/04 – Cheeseburger Soup, Homemade Pizza

Today I am posting the Cheeseburger soup recipe. OH. MY. GOSH! Seriously, why have I not had this before?! Try it and you will be the rock star in your house!

MONDAY – Cheeseburger Soup – Stove Top – This is seriously good! The key is to do the butter and flour part. I don’t even want to know the calories on this one! Recipe Below. Serve with some crusty bread.

 

TUESDAY – Chicken Poppyseed Casserole – Oven – This is a really good and very inexpensive recipe to make. I posted it, showing how cheap I can make it and how I get the kids to help. It costs about $1.45 a serving for the main dish. I serve this over rice or pasta, and with a salad.

WEDNESDAY – Chicken Taco Soup – Crock pot or Stove Top –  I have posted this one before and it is always a hit at our house. Plus I can put it in the crock pot or do it on the stove top. This is also a very inexpensive dish to make and I usually have everything on hand. Serve with corn bread, or tortillas.

THURSDAY – Easy Chicken Pot Pie – Oven – This is also a under $2 a person serving recipe. It is very good and you can always find printable coupons for the crust and a few other items. The total cost at my Walmart for the ingredients was $11.57. That is under $2 a serving as this serves 6 for a pie. You can double it and put it into a 9×13 pan.

FRIDAY – Homemade Pizza – Oven – Sorry. Not very original of me I know! But this is something we can make for family and have a lot of to make everyone happy! Plus, is another cheap meal and that seems to be the theme this week!

 

Cheeseburger Soup Recipe

Ingredients

  • 1/2 pound ground beef
  • 3/4 cup chopped onion
  • 3/4 cup shredded carrots
  • 3/4 cup chopped celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 4 tablespoons butter
  • 3 cups chicken broth
  • 4 cups cubed potatoes
  • 1/4 cup all-purpose flour
  • 2 cups cubed Velveeta
  • 1 1/2 cups milk
  • 1/4 cup sour cream

Directions

  1. In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
  2. Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
  3. Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
  4. Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.

The Hershey’s Fruit Pizza recipe is a beautiful and appropriate dessert for Valentine’s dinner. This is a recipe I have been making since I was 17 years old and is one that we never get tired of. It is a little time consuming but don’t let that scare you. I just didn’t want you to start it 1 hour before dinner. 🙂

First you have to create your base.
This will be 3/4 cup butter softened, 1 1/2 cup flour and 1/2 cup powered sugar. Now, I always double mine because I like the crust a little thicker….

Then press it into a pizza pan, mine is about 18″. The kids like to help with this part…


Bake at 300 degrees, 20 -25 min. until lightly browned.

 I add chunks of cheese to mine, and some green olives! This is one of those recipes that tastes better the second day!

Tuscan Pasta

Recipe from RichSeattle

2 boxes Barilla tri-color rotini
1 lb Oberto sliced salami
1 lb Oberto sliced pepperoni
1 bottle O-organics Tuscan Itallian salad dressing 16oz (you dont need it all)
1 package (about 16 oz) of frozen pre-cut red, yellow and green bell peppers
2 cans sliced olives
1 cup chunks of provolone cheese
1-2 handful of chopped onions (white or red or yellow)
McCormick Roasted garlic and bell pepper seasoning blend
McCormick Salad Supreme seasoning

Cook pasta as directed on package in large pan. Rinse pasta and allow to cool while continuing. In a seperate bowl, chop salami and pepperoni into smaller pieces to distribute. Chop peppers into small pieces. Add drained olives and onions.

Once pasta has cooled to room temperature, place back into oringal pan or large bowl (about twice the capacity of pasta to allow stirring). Add in 1/4 of bottle of dressing to pasta and stir in well. Add meat/veggie mix into pasta mixture and blend together well. Add up to 1/2 total bottle of dressing as desired (to coat salad well but not dripping).

Add in both seasonings to taste (about 1tbsp each) and blend well or add when serving by sprinkling on top.

Refrigerate before serving. Enjoy. For an extra snap of flavor, mix in shredded parmesan cheese to mixture (James reminded me of this after I took the picture).

Recipe can easily be halfed or doubled. Makes 10-14 servings per box, but you will eat more then one serving at a time…..

Sausage freezes really well. It also makes for cheap and easy dinners. This is what we make, it is called “stuff”

Take a bunch of potatoes, slice them real thin, I like to use a mandolin. I have even used left over baked potatoes from the night before.

While you are slicing, melt an entire stick of butter in a very large pan, cast iron is the best. Then add an entire sliced onion. If you cook the onions down until they are clear the kids will eat them.

Then, add the potatoes and any protein you like, we use breakfast sausage, bacon, steak, really you can use anything. Or leave out the protein and just eat it like this for a side dish. I have added eggs at the end, cooked them in and eaten this in a tortilla. AWESOME!
Keep the heat rather high and add more oil or butter if you need to so that the potatoes brown really nice.

Oh my gosh! They get amazing and really crispy! The potatoes break down a little and get all crispy and wonderful! Make sure to use a lot more potatoes then you think you need, the seem to disappear as they cook. Season it a bit with seasoning salt and pepper. Keep it simple, sometimes I add a little garlic salt, but just a little.

 Like I said you can eat it just like this as a side dish with some ketchup, or add some meat to it and make it a meal or even eat it in a tortilla as you are running out the door to baseball practice.

Roast Beef Sammie’s – serves 5-6
2lb deli sliced roast beef
1-12pk kings hawaiian sweet rolls
1 7-8oz pk sliced provolne cheese
1 14oz can beef broth/stock
1pk lipton onion soup mix
cooking spray

1) Combine onion soup mix with beef broth and marinade roast beef in refrigerate 1-4 hours.
2) Preheat oven 350 degrees and spray 13×9 baking dish with cooking spray and set aside
3) Separate rolls in half lay bottoms in baking dish
4) Add roast beef then top with cheese -reserve broth for dipping
5) Replace the top of rolls
6) Bake 15-20 minutes until cheese is melted completely

These are as INSANE as they look! Make them for your family and be a ROCK STAR! These are so easy you are not going to believe it!

I doubled this and made it in a 9×13. The recipe below is for a 8×8.

Oreo Fudge Brownies

1 box Brownie Mix
eggs & oil
1 heaping half cup (6 oz) Cookies & Cream ice cream
1/4 Cup hot fudge topping

Preheat oven & spray an 8×8 baking dish generously with cooking spray. Combine brownie mix, eggs, and oil as directed on the back of the box, but do not add the water. Add ice cream and hot fudge to the brownie batter and stir to combine. Pour half of the brownie batter into the baking dish, layer with Oreos, then top with remaining batter. Bake for 40-50 minutes or as directed on the back of the box.
