Coca Cola Ham Recipe

For the past few years I have been making a Coca Cola Ham for Easter. Even if I get a spiral sliced from the store, I have poured a can of Coke over the ham, it just seems to keep it so moist and good! I love the crispy edges and the hint of mustard. Give it a shot it is easy!

Coca Cola Ham

Ingredients

1 (6 to 8 pound) fully cooked, shank-end half ham
1 to 2 cups light brown sugar, firmly packed
1/2 cup yellow mustard
Crushed OR Sliced pineapple
Whole cloves, optional
Cherries, optional
1/2 can of Coca-Cola

Preparation

Wash ham thoroughly.
Rub fat side with brown sugar and mustard
Pour Coca-Cola over ham.
Pour crushed pineapple over ham.
Bake at 350 degrees for 3 hours.

* Now you can also score the ham, and place the pineapple rings across the top with the cherries in the middle. It is just easier with the crushed, but not as pretty! I also broil the top just for a few minutes to make it extra crispy. Makes 6 servings

Pepper Jack Chicken with Bacon Recipe

Oh my doesn’t this Pepper Jack Chicken with Bacon just make your mouth salivate? I am wishing we had smell-a-vision right now so you could all smell the amazingness of this delicious meal!

The ingredients for this dish are pretty self explanatory. They are all items you can easily find at your local grocery store. I definitely recommend sticking with Sweet Baby Rays for your BBQ brand as it is simply the best (in my opinion) but as for the remaining ingredients, the brand really does not matter one bit.

INGREDIENTS
2 lb Boneless Skinless Chicken Breast
6 slices Bacon
1 tsp minced Garlic
1/4 cup flour
Salt and Pepper to taste
4 tbsp Sweet Baby Ray’s Barbecue Sauce
4 oz Pepper Jack Cheese
1 cup Multicolor Peppers, cut into strips
1/2 cup Onions, cut into strips

DIRECTIONS

First make sure to preheat your oven to 375 and spray your baking dish with nonstick spray.

Next, fry the bacon until cooked fully, but not too crisp. Remove most of bacon grease leaving 1-2 tablespoons in skillet.

Now you will want to sautee peppers, garlic and onions over medium heat until they are tender. Once tender remove the veggies and set aside.

Take your chicken breasts and split them into halves (a thickness of about 1/2 inches). Dip each piece in flour and season with salt and pepper. Cook chicken in the skillet over medium heat for about 5 minutes per side side, until cooked through.

Finally, arrange the chicken breasts in prepared dish, slather the chicken with barbecue sauce, top them all with the sauteed veggies, sprinkle Pepper Jack cheese over top and top with bacon. Bake for 6-7 minutes or until cheese is fully melted and golden brown.

Lucky Charms Treats Recipe {For St.Patrick’s Day!}

St. Patrick’s Day is just around the corner. Every year I like to make something fun of this little Irish holiday for my kids. Since Rice Krispie treats are a household favorite, we decided to spruce them up and make them a bit more festive by using Lucky Charms! The kids loved them, with the fun rainbow colors and tasty marshmallows.

These Lucky Charm Treats are really super easy to make and are fantastic for a fun St Patrick’s Day classroom treat, for the kids lunches or to just have around the house as a sweet festive treat!

Lucky Charms Treats

Ingredients

3 tablespoons butter or margarine
1 package (10 oz., about 40) regular marshmallows
4 cups miniature marshmallows
6 cups Lucky Charms Cereal

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2. Add Lucky Charms cereal. Stir until well coated.

3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.

***Did you know that you can buy just the Lucky Charm Marshmallows? So if you prefer regular Rice Krispie Treats you can make them as normal and simply add in your Lucky Charm Marshmallows for the fun festive look!

Apple Pie Filling Recipe

I could eat Apple Pie pretty much year round. It really doesn’t matter what season it is, Apple Pie is a seasonless favorite! One of my favorite things to do is to make several batches of Apple Pie Filling and then freeze them. This way when I need a quick dessert for any occasion all I have to do is simply pull my pre-made Apple Pie Filling out of the freezer put in a pie crust, bake and enjoy! It’s so quick, easy and convenient! Plus it saves us from spending extra money trying to rush to find a store bought dessert that likely won’t even be that good.

Ingredients

4 cup sliced, peeled Apples
2 tbsp Lemon Juice
1/2 cup Sugar
3 tbsp Cornstarch
1/4 tsp Nutmeg
1 tsp Cinnamon
1 cup warm Water

Directions

First place sliced apples in a medium sized bowl. Add water and lemon juice, toss to prevent browning.

In a saucepan, whisk together cornstarch and water until fully blended. Add cinnamon, sugar and nutmeg. Whisk until blended. Add contents of apple slice bowl to saucepan and cook over low heat until apples are tender.

At this point you can either pour contents into a pie crust or you can pour contents into a freezer safe ziploc bag and freeze for a later date. If you freeze content, remember that when it’s time to use the Apple Pie Filling you will want them to be fully unfrozen. You can unfreeze them by either placing the entire ziploc bag and contents in a bowl with warm water or let them sit out on the counter for a couple of hours before adding to your pie crust and baking.

Peeps Pretzel Rods

Here is a fun little Easter snack you can make with your kids or surprise them with an extra cute treat in their Easter baskets! These Peeps Pretzel Rods are really so easy to make and were a huge hit in our house! The entire process took less than 10 minutes to make and the kids devoured them in about 10 seconds!

Ingredients

12 Marshmallow Peeps Bunnies
12 Pretzel Rods
4 oz White Candy Melts
Pastel Candy Decorations

Directions

To start this project, line a baking sheet with parchment or wax paper.

In a large bowl melt chocolate coating in the microwaving for about 45 seconds. Make sure to remove from the microwave and stir. Repeat until melted and smooth.

Dip and or spoon pretzels rod to cover about 1/2 way in white chocolate. Shake to allow excess to drip back into tray.

Sprinkle with pastel decorations and place on prepared sheet to set.

Place in refrigerator for 5 minutes or until chocolate is fully hardened.

Using a spoon, put a little melted chocolate on back of bunny and position on candy coated rod. Return the baking sheet with your finished Peeps Pretzel Rods to the refrigerator until set.

Boston Cream Poke Cake

For dessert the other night I made a Boston Cream Poke Cake for my husband. His very favorite dessert is a jello poke cake and so I though this would be perfect!

Traditional Boston Cream Cake is 2 layers of yellow cake with a cream filling in the middle topped with a chocolate frosting. It can be hard to get it to hold together correctly. That is why the poke cake is perfect.

You are going to take a yellow cake mix, make it according to the directions. When it comes out of the oven, you are going to poke holes all over the cake. Now, don’t quite poke all the way to the bottom of the pan, the cream leaks out.

Then you will make a box of vanilla pudding, pour it over the top and stick it in the fridge until it is cold. The chocolate topping can be done 2 ways. The best is to make it from scratch, or you can actually take a can of chocolate frosting and heat it in the microwave for about 25 seconds and pour over the top. I prefer the homemade, but if you are in a hurry that might work in a pinch.

Boston Cream Poke Cake

Ingredients

1 box Butter Recipe Yellow Cake Mix

2 small boxes French Vanilla Pudding Mix

1 tub chocolate frosting

Directions

Bake cake as directed on the box.
Prepare the pudding as directed on the box.
While the cake is still warm, use the end of a wooden spoon to poke holes randomly through the cake.
Spread the pudding over the cake, pushing it into the holes.
Refrigerate for one hour.
Remove the lid and seal from the frosting and microwave for about 30 seconds, until the frosting can be poured.
Spread the frosting over the cake and refrigerate overnight.

If you choose to make your own chocolate frosting:

1 1/2 Cups Sugar
3 tbsp. Cornstarch
4 1/2 tbsp. Cocoa
1 1/2 Cups Boiling Water
1 tsp. Vanilla
1 tbsp. Butter

Combine the sugar, cornstarch, cocoa and boiling water in a large microwave safe bowl, mixing well to combine. Microwave on high for 3-4 minutes, stirring occasionally. The mixture will thicken and rise as it is cooking. Once the mixture has thickened, remove it from the microwave, stir in the vanilla & butter. Stir the mixture well before applying to the cake after it has cooled a bit.

Infused water is not only a huge trend right now, it’s easy to prepare, inexpensive to make, and an extremely healthy alternative to high sugar juices and soda. It only requires a short prep time, but needs several hours to set, infuse, and cool.

Infused Water

There are really no hard and fast rules to it either. You can use items from your garden, sale produce, leftover fruit tray items, or really anything you have on hand that you like the flavor of and will mix with other items.

Typically these amounts work well for one jar plus one refill of flavor. If you are doing larger amounts your conversion amount is one quart = 32 ounces, then just figure out how much to need for smaller or larger amounts. Most recipes use two to three different ingredients, you may want a little more of something if only doing two flavors, or a little less if doing four or more. If you are doing single flavors (ie: only strawberries), use about three portions of the measurement before.

Here are measurements of items that work well for a quart size serving:

Fruits

1 Orange (remove rind to avoid bitterness)
1 Lemon (remove rind to avoid bitterness)
1 Lime (remove rind to avoid bitterness)
1 Apple (peeled & sliced)
3-4 Strawberries (sliced)
6-7 Raspberries (infuses best when crushed)
6-7 Blueberries (infuses best when crushed)
1 Mango (sliced)
2 Pineapple Slices (fresh is best, canned doesn’t have as much flavor)
4 Watermelon Chunks
5 Honeydew Chunks
2 Starfruit Slices
8 Blackberries (infuses best when crushed)
15-20 Pomegranate Seeds

Vegetables:

6-7 Cucumber Slices

Herbs/Spices:

1 Tea Bag (pick your flavor!)
1 Teaspoon Dried Herbs (may vary with strength of the herb!)
4-5 Basil Leaves (ripped)
2-3 Sprigs of Thyme
1 Cinnamon Stick
2 Dill Sprigs
1 Rosemary Sprig
6-8 Mint Leaves
3-4 Cilantro Leaves (ripped)
4 Sage Leaves (ripped)
2 Fennel Top Pieces

Infused Water Tips

Glass mason jars work great, and glass pitchers and water bottles are best to avoid possible chemical leaching.

Warm water and/or allowing the mixture to sit in the sun for about an hour will help release flavor and speed up the infusion process.

Chill for 4-6 hours before serving. Or, you can make it a little strong and add ice to chill – you want it strong if adding ice because as the ice melts it will dilute the flavor.

Any time the flavor is too strong, you can add cold water to dilute until you find the taste you like.

Southwestern Shrimp Skewers Recipe

These delicious Southwestern Shrimp Skewers could be the perfect way to spice up your holiday celebrations. There is nothing wrong with adding a little something fresh and spicy to your holiday platters. You are going to love these delicious Southwestern Shrimp Skewers. They are super easy to make, take very little preparation (10 minutes or less) and taste absolutely divine!

The best thing about this recipe is that you can make it anytime of the year. Grill them up outside in the summer and bake them inside through the winter. Either way they are sure to be a major hit!

INGREDIENTS

1 lb Medium Peeled Deveined Shrimp
5 oz Cherry Tomatoes
2 Limes
4-5 small Peppers
2 tbsp Olive Oil
1/4 tsp Cayenne Pepper
1/4 tsp Cumin
1 tbsp chopped Cilantro
Sea Salt and Fresh Ground Pepper to taste
Skewers

DIRECTIONS

First preheat your oven to 400 degrees Fahrenheit. Lightly grease a Baking Rack with a wire rack and set aside.

Take your 2 limes and slice them into 8 like sized wedges.

Split and remove seeds from each pepper. Place lime wedge, then shrimp, then tomato, then shrimp, then pepper, then shrimp, then tomato, then lime wedge on each skewer. Place your filled shrimp skewers on the greased baking sheet and drizzle with olive oil. Season prepared skewers with salt, pepper, cayenne and cumin.

Cook in the oven for 8-10 minutes or until shrimp are done. Remove from the oven and serve over rice and garnish with cilantro.

There are so many different versions of Chex Mix, however I must be honest this Vanilla Lemon Chex Mix recipe is one of my ultimate favorites. It is the perfect combination of sweet and sour. Make it as a tasty treat around the house, to give as a gift in Holiday themed containers or as a feature in your next party.

Ingredients

5 cups Rice Chex Cereal
¾ cup Vanilla Baking Chips
3 Tablespoons Butter
2 Tablespoons Lemon Juice, fresh
1 1/4 cup Powdered Sugar

This recipe is really pretty simple and does not take much time at all. Start out with a small microwavable bowl. In the microwave melt the Vanilla Baking Chips and the Butter together (it should take about 30 seconds). Mix the ingredients together until smooth and set aside for later. Use a citrus juicer to juice one lemon until you have about 2 tablespoons of lemon juice. (If there is a little more it can be added in for extra flavor!). Mix the lemon juice with the melted vanilla chips and butter. At this point beware…it will smell heavenly! Don’t be tempted to eat it all up before you have come to the final product.

Measure the Chex cereal into a large bowl and gently pour the lemon vanilla mixture over the top of the cereal. Using a spatula or a spoon carefully mix ingredients together until all of the pieces are fully coated. Measure the powdered sugar and pour over the coated cereal. Stir gently until the pieces look dry and all of them have a powdered sugar coating. Serve for a delicious lemony snack!
