I cheated – Pumpkin Raisinets Oatmeal Cookies + Coupons!

I posted this recipe and some deals the other day. I made these cookies tonight but I TOTALLY cheated and they came out AWESOME!!! I highly recommend taking the easy way out and doing it the way I did!

I used a Betty Crocker Pumpkin Spice cookie mix!!

This is how my recipe went….

Mix one Betty Crocker Pumpkin spice cookie mix according to directions

Add 2 cups Raisinets

Add nuts (optional)

Bake according to directions

Frost with recipe below

Stack With $1/2 Betty Crocker printable HERE (77477)
Total: $.83 off each one

C&H Powdered Sugar $2.09 (Randalls)
Use $.50/1 C&H Sugar Product 10/16 RP (doubled to $1)
Total: $1.09

Raisinets Milk or Dark Chocolate 11oz. $2.78 (Walmart) 
Use $1/2 Raisinets coupon HERE
Total: $2.28

OR if you want to do it from scratch!

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon baking powder ( coupon HERE)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt ( coupon HERE)
  • 1 cup (2 sticks) butter or margarine, softened
  • 1 cup granulated sugar
  • 1 can (15 ounces) LIBBY’S® 100% Pure Pumpkin
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (12.5 ounces) NESTLÉ RAISINETS Milk Chocolate-Covered Raisins coupon HERE
  • 1 cup chopped walnuts
  • Vanilla Glaze (recipe follows)

Directions

PREHEAT oven to 375° F. Grease baking sheets.

COMBINE flour, pumpkin pie spice, baking powder, baking soda and salt in medium bowl. Beat butter and sugar in large mixer bowl until creamy. Beat in pumpkin, eggs and vanilla extract. Gradually beat in flour mixture. Stir in Raisinets and nuts. Drop by rounded tablespoon onto prepared baking sheets.

BAKE for 15 to 20 minutes or until edges are lightly browned. Cool on bakingsheets for 2 minutes; remove to wire racks to cool completely. Drizzle or spread with Vanilla Glaze.

FOR VANILLA GLAZE:
COMBINE
 1 cup powdered sugar, 1 to 1 1/2 tablespoons milk and 1/2 teaspoon vanilla extract in small bowl; mix well.

The recipe says these have oatmeal in them, but I don’t see any in the ingredients.

How much oatmeal should be added and will it affect the bake time? Do I need to increase the liquid? More vanilla and butter?
As you can tell, I’m new to this whole baking world, but his just sounds so darn yummy!

You don’t add any! It is already in the cookie mix!

If making the recipe from scratch, how much oatmeal do you use and do you need to add anything additional?

You know, I actually just took a handful because the batter was a little thin and I thought that would thicken it up.
