It has been a long time since I have posted my weekly menu plan, I honestly miss doing it because I can’t tell you how much I love to cook. Well, all you have to do is look at me and you can see that I like to eat!
This is a feature that I am bringing back, and hope that you will post your ideas as well, either in the comments or eventually as a link when I add that feature.
Some of my older recipes when they got moved over to WP from blogger, the pictures did not move over correctly. You will notice that they are HUGE and don’t fit. I have to go in and re-size EVERY picture. I have been working my way through them but it is taking me forever…. I need a computer smart teenager for a day to help me!
** Also, it is our spring break so we have a lot of extra things going on, dinners will be not the normal this week!
This is my plan:
Saturday: I am sooooo excited for today! The mens group at the church where I work, were smoking some meat all night, they tossed in for me 2 pork loins and a rack of ribs! They cooked all night and I have to pick them up in a little bit. So, that is what we will be snacking on all day and night! With the left over pork I am making sandwiches for lunch tomorrow.
Sunday: Today is Paul’s birthday… he still has not decided what he wants for dinner! For sure we will be having his FAVORITE cake for dessert. Better than — Cake.
Monday: Paul and I have a date tonight so the kids will be at the sitters, I plan on sending dinner with them. I have a frozen lasagna and Texas toast.
Tuesday: Boneless Pork Chops ($2.99 at Kroger this week) and 7up Biscuits. I am going to try a new recipe for the pork chops, my husband does not like sweet main dishes, but we giving this one a try, Apricot Pork Chops.
Wednesday: Chicken Drumsticks ($.99lb. at Kroger also) the kids LOVE these! I actually made these for the kids at my preschool for Thanksgiving lunch, EVERY child ate them up… some of our little 2 year olds ate 3! All you do is place all your drumsticks on a grill pan, coat them liberally with Lowery’s and broil until they are cooked and brown. My husband does them on the grill the same way. For a side dish while you can still get them Acorn Squash.
The rest of the week we will be gone to Sea World! I am mostly excited about eating on the River Walk in San Antonio. If you have not been, they have the BEST restaurants!

Are there any good deals for Sea World (San Antonio)?
Is the Lowery’s that you are referring to season salt? Also, do you broil them in the oven or on your stovetop? I have be looking for a way to cook drumsticks and am excited to use this one! I love your blog!! Thanks for all your hard work and I hope you enjoy your vacation!!!
Yes use the season salt and that is all you need! Broil them in the oven until they are done, doesn’t take very long that way!
So glad you are bringing this back!!! I love to see what other people are doing for meals as I frequently feel like I’m in a dinner rut. Also love the recipes you post….. so far most have been a hit at my house.
In case you’re looking for another pork chop recipe, this one is amazing and super easy.
Pork Chops Diane:
4 boneless loin pork chops
2 tsp. lemon pepper
2 T. butter
2 T. lemon juice
1 T. Worcestershire sauce
1 tsp. Dijon mustard
1 T. minced parsley
Sprinkle surfaces of chops with lemon pepper. Heat butter in heavy skillet over medium-high heat; cook chops fofr 3-4 minutes on each side, or until cooked through. Remove from skillet and keep warm.
To the skillet, add the lemon juice, Worcestershire sauce, and mustard. Cook, stirring up the browned bits with a wire whisk and mixing with pan juices, until heated through. Pour sauce over shops, sprinkle with parsley, and serve.
We’re heading to San Antonio at the end of the week too. Do you have any Riverwalk restaurant suggestions for first times?
Anything along the riverwalk, the atmosphere is the funnest!

You should check out Mi Tierra in San Antonio. It’s in Market Square (El Mercado) and it’s open 24/7. It’s a Mexican restaurant and bakery that has been around for years and years. We really enjoy it and they have good breakfast options in the bakery for before Sea World.

Hi!!! I just made the Apricot Pork Chops that you are planning on having Tuesday. Just let me say.. OMG!!! They are tasty! I would suggest cooking them just a little bit less than the hour it says. Mine were a little bit dry. They were not especially thick chops, so I should have adjusted for that but I didn’t. I made twice baked potatoes and a tomato cucumber salad. No leftovers either!!! 🙂

I second Julie H and her suggestion!!! The hubbs and I just got back from San Antonio we stayed ay La Centera!! It was amazing! We also went to eat where Julie suggests. I was shocked when I got there because there is a wait for the wait, seriously but the food is so worth it!!! We also went on a Saturday night, so maybe thats why?? We only waited about 45 min. Best magaritas. Ever.
