School’s back in session and if you’re like me, you want easy, delicious recipe ideas to make dinnertime something everyone looks forward to. It’s so worth the effort to get the family around the table to talk, reconnect and trade stories about the day!
If you’re looking for an easy no boil lasagna recipe, this one is simple and delicious! Ingredients like sausage and cottage cheese make it just a little different than some other recipes – and give it a little extra zip and creaminess.
Easy No Boil Lasagna Recipe
First, you’ll need the following ingredients:
- Box of Lasagna (No-Boil Lasagna Noodles are NOT necessary)
- 1 Roll Mild Breakfast Sausage
- 2 24oz Jars of Spaghetti Sauce
- 4 Cups Shredded Mozzarella
- 1/2 Cup Grated Parmesan Cheese
- 16 oz Cottage Cheese
- 2 eggs
- Herbs (optional)
Directions for making this easy no boil lasagna:
1 . Preheat oven to 375 degrees.
2 . Get out a couple medium sized mixing bowls. In one bowl mix together all the cheeses, and eggs. (Reserve about a cup of mozzarella for the top of the lasagna!) In the second bowl pour both jars of sauce.
2 . Cook the sausage until done and drain – stir into the bowl of sauce.
3 . In a 9 x 13 baking pan (or this one is a little bigger and perfect for larger families!), begin to layer the sauce, cheese and noodles like this:
- Spread a cup of the sauce first (on the bottom of the pan), then noodles, then cheese mixture – followed by noodles, sauce and cheese – followed by noodles, sauce and cheese. Continue until you are out of noodles – it should make about 3 layers.
If it looks like you may run a tad short on the sauce, just stir a little bit of water into it. The main idea is to make sure all the noodles have wetness surrounding them, so that they’ll cook while they bake.
4 . Add the remaining mozzarella cheese to the top, and if you like, add some fresh herbs like rosemary, parsley, basil or oregano.
I had some I was dying to use, so I just snipped a little with my herb scissors. While this step is totally not necessary, it makes the taste a little less “canned” and brightens up the top. 😉
5 . Cover with foil and bake for 1 hour, uncover the last five minutes to get a golden crust on the cheese topping.
