I am literally going to chew my arm off, I am on a stupid diet and seriously hungry! I know, I know, you aren’t supposed to get this hungry but to save a long story I just am!
INGREDIENTS
Zucchini-Bread
6 eggs
1 cup vegetable oil
1 cup applesauce
2 cups white sugar
2 cups brown sugar
6 cups grated zucchini
4 teaspoons vanilla extract
3 cups all-purpose flour
3 cups whole wheat flour
6 teaspoons ground cinnamon
2 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoon salt
1 cup chopped walnuts ( I don’t put any in)
DIRECTIONS
Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour your pans.
In a large bowl, beat eggs until light and frothy. Mix in oil, applesauce and sugars. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into prepared pans.
Bake for 60 to 70 minutes, or until done or 20 min on muffins.

These look so good and I just bought some zucchini today! I think I may try these out! Since my kids doing eat that much (YET) these would be great to freeze!

Hang in there Tiffany! You can do it!! (making up for my oreo comment the other day). The pictures just might ruin my diet too. I was telling my brother Dustin about looking at pics of Bakerella the other day while we are both dieting (okay, yours is a little more extreme than mine). He thinks that looking at food pics while dieting is like looking at porn while your married. You aren't technically cheating but it will make you slip up.

Diets….yuck! I am blessed with an awesome metabolism, but the one time i tried to fast, i lasted 3 whole hours. Its impossible when you have to cook for the kids. I am very lucky as I have minus will power. I am jealous of all your beautiful veggies. we are just putting in our cuke-a-bits and tomatoes this week. Its crazy how short our season is here. my mom used to make a casserole with zucchini, summer squash, tomatoes onions garlic, spices and topped with cheese, i know that's not really a recipe but i remember it was yummy. Don't forget there is always "leave a zucchini on your neighbor's porch day"

For the record, I am covetting your zucini and squash. We purchased a grill basket and ever since I am spending way too much money on these. So here's the trick. Slice up veges (the above mentioned plus everything else you love,) throw em in a large ziploc bag with a little olive oil and seasoning salt then cook em in the basket on the grill. Soooo good, I hardly eat whatever meat we grill, just love the veges done this way!

Your veggies look really good! I can't wait until ours are ready for picking:) I'm going to try out your bread…we LOVE zucchini! I have a recipe for a squash casserole that I make sometimes. It is really good and the kids like it too if you are interested…..not diet friendly though:)
