CVSing despite no ECB"S!

It broke my heart going to CVS without a CVS card or any ECB’s. My purse got stolen last week with my cards and about $50 in extra care bucks. Despite all that and no EBC’s to start with I still did o.k.

Homemade from scratch Banana Pudding… review!

My husband and I love banana pudding. I usually make it the traditional way with instant vanilla pudding and vanilla wafers. One Thanksgiving when I was in college, ( no one tell my husband this story….) I went with a boyfriends family on vacation for the break. His Mother made the most amazing homemade banana pudding I have ever had, it was insanely good. I have tried to repeat it and have never been successful. She did not use instant pudding.
Fast forward to a few weeks ago when we went camping. We got rained out one night and went into town for dinner. The men got banana pudding for dessert for themselves in honor of my birthday 🙂 It was INCREDIBLY good! They used sugar cookies instead of vanilla wafers and it was the perfect ratio of cookies, pudding and banana’s. Since them my husband has been begging me to make it. So I looked at tons of recipes on the web and ended up making it this way. First I made huge soft sugar cookies, just cutting them out in random circles. It didn’t matter if they were pretty. I made up my own recipe:

Sugar Cookies:
1 c butter
1/2 c. white sugar
1/2 c. powdered sugar
2 eggs
1 t. vanilla
1 t. almond extract
3 3/4 c. flour
1 t. cream of tarter
1 t. baking soda
1 t. salt
1/4 c. heavy cream

DIRECTIONS

  1. In a mixing bowl, cream butter and sugars. Beat in egg, vanilla and almond extract. Combine the flour, baking soda, cream of tartar and salt; gradually add to the creamed mixture and alternate with heavy cream. Shape into two 5-in. rolls; wrap in plastic wrap. Refrigerate for 1 hour or until firm. Unwrap; cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 8-10 minutes. Remove to wire racks to cool.

Next I made the banana pudding recipe…

Banana Pudding
10 servings

Hands on: 25 minutes
Total time: 1 hour, 25 minutes or more for cooling

Feel free to use the full-fat versions of the sweetened condensed milk, if you prefer. The pudding can also be served in individual 1-cup ramekins.

1/3 cup all-purpose flour
Dash of salt
2 1/2 cups 1 percent low-fat milk
1 (14-ounce) can fat-free sweetened condensed milk
2 egg yolks, lightly beaten
2 teaspoons vanilla extract
3 cups sliced ripe bananas (about 5 to 6)
45 reduced-fat vanilla wafers
4 egg whites
1/4 cup granulated sugar

Preheat oven to 325 degrees.

Combine flour and salt in medium saucepan. Gradually stir in low-fat and condensed milks and yolks, and cook over medium heat, stirring constantly, for 8 minutes or until thickened. Remove from heat; stir in vanilla. Arrange 1 cup banana slices in a 2-quart baking dish. Spoon 1/3 pudding mixture over bananas; top with 15 vanilla wafers. Repeat layers once; top with remaining bananas and pudding. Arrange remaining 15 wafers around inside edge of dish. Gently push wafers into pudding. Beat egg whites at high speed with an electric mixer until foamy. Add sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar is dissolved (2 to 4 minutes) Spread meringue over pudding, sealing to edge of dish. Bake for 25 minutes or until golden. Let cool at least 30 minutes.

I have to say I was disappointed. It was a bit time consuming as any good dessert can be, but I still like the instant pudding and vanilla wafer recipe better!  Paul liked it a lot, not as much as the restaurant birthday dessert dish, but still thought it was good. The pudding part to me really lacked something…

Any ideas? I am willing to put in the time and effort if I can make it right! Maybe I haven’t found the right recipe. Maybe homemade form scratch isn’t better? I could be making it too hard and should just stick with Jello instant pudding and boxed cookies! Or maybe I should just call the ex-boyfriend’s Mother and ask for her recipe….

I have waited 11 mo. for fresh blueberries!!! My kids eat them by the pound. Last year at the end of the season we picked 17 lbs. in about 45 min. I thought I might be finally able to put some in the freezer, less than 8 hours later my kids had eaten the entire 17 lbs! Out of the 102 lbs. we picked last year only 3 lbs. made it to my freezer!
* Do you have any idea what the diaper of a baby who has only eaten blueberries for 2 days looks like??? I am not going to take a picture, you will have to use your imagination!

We headed out yesterday and the kids got to work. They have a little business with returning customers every year, they pick blueberries and sell them to their “clients”. 
Rush was a big help this year…. they should have weighed him when he came in and when he left. I left about $5 extra to cover the 3 lbs I think he ate while we were there!
We were only there an hour but they picked about 20 lbs. We will be going back almost every other day for the next month until they are gone. 

If you are in the Houston area and want to go to the best blueberry farm there is here are the directions.
Pioneer Blueberry Farm:
Take 1-45 north almost to Conroe, exit loop 336 south and go right or east at the light. Take 336 east until you come to 105. There is a gas station and McDonalds at the corner. Take a right and go east. At this point set your odometer! Take 105 east for 8.6 miles. You will be looking for a little street sign that says Pioneer Lane. Turn left on Pioneer Lane. Ed Harger’s  blueberry farm is about 1.2 miles down on the right side. He is open sunrise to sunset every day. Blueberries are $1.75 a pound this year, he uses no pesticides.

I am getting worried that my kids don’t need me, even the little ones. A quality that I love about my children is that they are “do it yourselfer’s” if they want or need something they don’t hang around for help.
 I’d say 90% of the time they are very good about asking permission, but once I have uttered a child’s magic word, “Yes” they are gone. There is no chancing that I might realize what they have asked and change my mind. 
For example, Storie asked me yesterday if she could have some peanut butter. I said “yes” thinking as soon as I am done checking my email I will get her some. Apparently that was not in her time frame. Ten minutes later this is what I found…

Rush apparently wanted some peanut better also. I thought it was nice Storie shared with him don’t you?
I was thinking Storie wanted a sandwich or apples slices with peanut butter, but now I know when she asks for peanut butter, I can just hand her a spoon and the jar!

Did you get your FREE floats at Sonic! I am embarrassed to say that we went twice! A friend and I took the girls first, then after baseball we had to go back with the boys, right? They are open until midnight… maybe the spouse and I will go back for a date:) Just kidding, but I was impressed that they were so efficient. They also didn’t even bat an eye when we said “8 please!”

This is a great offer. We have made it a point to take the kids to as many National Parks as we can depending on where we are living at the time because they really are beautiful. A few years ago we went for Thanksgiving week to New Mexico. We went to Bandelier NP and it was AWESOME…favorite NP to date!! The Tsankawi ruins is an unexcavated area where there is still pottery on the ground..everywhere you look. There are many interesting trails with cave dwellings and paintings. The kids loved all of the different trails because they ALL involve climbing wooden ladders….some quite high I might add. This is really a must go if anyone is in the area or planning a trip! We ended up going back for a second day and ditching another plan because it was so much fun.
