Oh my doesn’t this Pepper Jack Chicken with Bacon just make your mouth salivate? I am wishing we had smell-a-vision right now so you could all smell the amazingness of this delicious meal!
The ingredients for this dish are pretty self explanatory. They are all items you can easily find at your local grocery store. I definitely recommend sticking with Sweet Baby Rays for your BBQ brand as it is simply the best (in my opinion) but as for the remaining ingredients, the brand really does not matter one bit.
INGREDIENTS
2 lb Boneless Skinless Chicken Breast
6 slices Bacon
1 tsp minced Garlic
1/4 cup flour
Salt and Pepper to taste
4 tbsp Sweet Baby Ray’s Barbecue Sauce
4 oz Pepper Jack Cheese
1 cup Multicolor Peppers, cut into strips
1/2 cup Onions, cut into strips
DIRECTIONS
First make sure to preheat your oven to 375 and spray your baking dish with nonstick spray.
Next, fry the bacon until cooked fully, but not too crisp. Remove most of bacon grease leaving 1-2 tablespoons in skillet.
Now you will want to sautee peppers, garlic and onions over medium heat until they are tender. Once tender remove the veggies and set aside.
Take your chicken breasts and split them into halves (a thickness of about 1/2 inches). Dip each piece in flour and season with salt and pepper. Cook chicken in the skillet over medium heat for about 5 minutes per side side, until cooked through.
Finally, arrange the chicken breasts in prepared dish, slather the chicken with barbecue sauce, top them all with the sauteed veggies, sprinkle Pepper Jack cheese over top and top with bacon. Bake for 6-7 minutes or until cheese is fully melted and golden brown.

Yesterday I took the little kids to see Zootopia at the Deerbrook Dolby Cinema AMC Prime Theater. It was AWESOME!
Zootopia was such a great movie and treat for these guys!
I have not been to see a movie since we lost Emma. The last movie I saw was with her and it was Inside Out. I have avoided movie theaters since then, but I wanted to go with these little guys because they are worth it.
What was one of the most awesome things for a Mom who has a little anxiety about taking a big family to a movie theater? ASSIGNED SEATING! I can’t tell you how much I love the new AMC prime theaters. It means I don’t have to get there an hour early to get seats all together, which is important to me for my movie experience.
Little kids and adults are comfy in the reclining seats. Where else can you watch a movie in public with your feet out in front of you?!
Zootopia was a breath of fresh air and absolutely, hands down, the best animation I have ever seen. I had so much fun sharing this experience with 3 different families who are MyLitter readers.
Zootopia was funny, and I loved some of the one liners that only adults caught. I loved the God Father, Frozen and Breaking Bad references, and OH MY HEAVENS… The SLOTH! I was laughing so hard! That is really my favorite part.
Andie was pretty scared in a few parts, so 5 for most kids might be too young. Being the youngest of 7 she has seen Harry Potter and even Lord of the Rings, but I might not take a kid who is under 6, just a suggestion.
Again, the animation was AMAZING, the best I have ever seen.
Their investigation takes them to the local DMV (Department of Mammal Vehicles), which is staffed entirely by sloths.
I think there were a few areas where there were some conflicting stereotypes that might confuse kids, and I didn’t like the scene where the Boy Scouts were made to be the bullies.
However, I LOVED the pro-cop aspect and I think a lot of kids probably will leave considering becoming a police officer.
The story line was upbeat and positive. The characters were well thought out and there was an appropriate twist to the story that made it fun!
As you can see, this guy LOVED this movie. I really, really enjoyed it and highly recommend it. You only have one week to view this movie at a AMC Prime location, so make sure you get in there!
