This is absolutely, hands down, the BEST Cake Mix Banana Bread Recipe that I have EVER had. I am not even joking a little bit. I would not joke about banana bread.
I have been making banana bread for a long time. With cream cheese, sour cream, baking soda, no baking soda, trying to find the perfect recipe. Yesterday, on my Facebook page, a reader Patty, mentioned banana bread made from a yellow cake mix. Huh?
I started asking around and was shocked that my sister had such a recipe tucked away from a church event a while ago and never had the chance to make it. The rest is history.
I had a pile of melting bananas, and so I might have added a little more banana then called for, but that turned out to be ok. The recipe made 2 loaves and they lasted exactly 4 1/2 minutes after I took these pictures.
Cake Mix Banana Bread
Ingredients
1 Yellow Cake Mix
1 Stick Melted Butter
3 Eggs
3 Mashed Bananas
Directions
Preheat oven to 350. Melt butter. In a separate bowl add cake mix, eggs and mashed bananas. Beat in melted butter and mix well. You can add 1 cup of walnuts if you like nuts in your bread. My kids don’t 🙁 Pour into 2 greased loaf pans and bake for about 45 minutes until cooked through.

I made these a couple of nights ago and I don’t have any loaf pans so I made muffins instead. It took 20-25 minutes in the oven and made 18 muffins. They were delicious! Thank you for this super easy recipe. I am definitely making these again!!!

1/2 cup Unsweetened applesauce. I use it in place of oil whenever I bake using a packaged mix! Provides the moistened without the calories!

I just pulled one out of the oven and “tested” it ^_^. The recipe I used is similar to yours but even more simple: cake mix, 2 eggs, 4 mashed bananas. I used a spice cake mix instead of yellow and it is pretty darn good if I do say so myself! Can’t wait to try yours, though. 🙂

This reminds of how my mother would make her muffins, the texture was similar to cornbread but tasted 10x better! I think this recipe would go great with macadamian nuts or any kind of nuts really. Thanks for the share!

try with banana cake mix too for an extra banana kick…really yummy. I like to make a peanutbutter drizzle when I am making for neighbors or as gifts, but I am learning to ask about nut allergies first……..sigh…. if not peanutbutter a cinnamon drizzle is very good 😉

have a batch of the regular baking in the oven now. then I mixed up a batched with a pineapple cake mix and added the nuts. didn’t put nuts in the first batch hubby doesn’t like nuts. cant wait to try.
