La Madeleine Tomato Basil Soup Recipe
Ingredients
- 28 oz. Can Tomatoes, add the juice as well
- 4 cups tomato juice and/or chicken broth
- 12 to 14 washed fresh basil leaves
- 1 cup heavy cream
- 1/4 pound sweet, unsalted butter
- salt to taste
- 1/4 teaspoon cracked black pepper
Instructions
Puree tomatoes with the basil leaves in a food processor. If you have a immersion blender ( like the one I posted HERE use that)
Return to saucepan and add cream and butter, while stirring over low heat. Garnish with basil leaves and serve with your favorite bread.
I have added sautéed onions as well.
