You might have seen this recipe around the internet this past week… my Fiesta Chicken crockpot recipe. Those of you who have been reading my site for a while might have recognized my kitchen anyway…
I make this for dinner often. It is a simple, easy and DELICIOUS chicken crock pot recipe that my kids love. I love it as well for that matter…
Anyway, I was in a hurry and made it for dinner last week and was out of a few ingredients and made some substitutions. It looked really pretty when I had it all together and so I snapped a picture and figured I would let you guys know what I was having for dinner.
Well, 26 MILLION people saw my picture last week with over 550,000 shares of my picture & recipe!! (Then of course you have countless people who stole my picture and reposted exactly my word for word comments and directions as their own, and those were shared a crazy number of times…) But in the end, it is a DANG good chicken recipe!
I was out of the standard Ranch packet you are supposed to dump on the top, but I had this packet of Fiesta Ranch and so I used that… OMGosh! It made it soooooo good!!
This recipe is sooooo easy! You can use raw, frozen or unfrozen chicken. You dump it all in the crockpot, sprinkle the dip packet over it all, and then cook it on high for 4 hours or 6 on low. Then shred the chicken with forks and mix it all up. It looks a little sketchy at this point, but don’t worry. Then we make rice, and serve this over the rice using tortillas to scoop it up OR you can just make chicken tacos. So many choices!
If it is a little soupy that is ok. Leave the lid off for a little bit and the liquid will disappear. I think it is good with a little sauce though personally.
Instead of the usual Rotel I used petite diced tomatoes drained, as my little kids don’t like the spice from Rotel.
The cream cheese doesn’t need to cook all day with the chicken. In fact, it might curdle if you boil it. I typically toss it in about 40 minutes before we eat, it just needs to get soft enough for you to stir in.
**If you don’t feel like heading into the store for all your shopping list for this, you might try the Walmart Grocery Pickup if it’s available in your area (there’s coupon codes all the time)
Fiesta Chicken Crockpot Recipe
- 4 chicken breast (frozen or raw)
- 1 packet Fiesta Ranch dip (by the salad dressing)
- 1 can black beans (drained and rinsed)
- 1 can Rotel
- 1 can corn not drained
- 1 block cream cheese
Cook on high in the slow cooker for 4 hours or 6 on low. Shred with forks and eat over rice with tortillas.
If using the Instant Pot, use raw chicken. Cover the chicken with the ingredients listed. Press the poultry button then add 5 minutes to cook the chicken for a total of 20 minutes (some prefer 25 minutes).
The Instant Pot will release the pressure. Your chicken will be ready to shred and serve!

My kiddos are typically difficult with new foods, so I made a few adjustments to keep the peace. I used Pinto Beans in place of the black and a taco seasoning pkt, instead of Ranch. HUGE HIT! I also noticed it was soupy (like you mentioned) so about an hour before dinner, I threw in a couple handfuls of rice – PRESTO! Problem solved! Thanks!

I throw my cream cheese into the crockpot about 45 minutes before it is done cooking and stir a couple of times before taking off the heat. Cream cheese will definitely curdle if left too long.

Mine looked like it had curdled but once I shredded the chicken and added it back to the pot,giving every thing a good stir it was fine. Im now trying this without the corn using kidney beans and extra tomato….

The cream cheese technically only needs to melt, not cook for 6 hours. I make a similar dish for enchilada filling and add the cream cheese at the end.
Also, I prefer to drain the beans but found adding a chopped onion gives plenty of extra moisture and flavor with the sodium.

I didn’t use this recipe. I used one from Facebook that told me to add the cream cheese at the start. It of course curdled. I just took the hand mixer to the whole crockpot and shredded the chicken and fixed the sauce at the same time. Came out perfect.

You should always drain and rinse canned beans.

Draining beans is a “depends” situation. According to the Bean Institute, (yes – there is one of those too) it reduces the sodium from the canning process by around 36%. Rinsing the beans reduces the sodium by around 41%. But here is the thing, at the bottom of the can is a whole layer of bean starch that many people use to help thicken soups and recipes that require thickening without adding starch or flour.
So the answer on rinsing beans is generally a “depends” answer. In the case of this recipe – It is likely a yes as the corn and tomatoes are providing all the moisture necessary to cook the chicken and there is nothing else in the pot to soak up the moisture.
However, in something like a soup or chili – I myself wouldn’t drain or rinse as you want both the liquid and the flavoring (ie salt.)

I know it’s true for beans made from scratch/dried. Not sure about canned.

I made a double portion since I have 3 young adult boys/men and my husband. I used chicken breast & thighs. I’m gonna use 6 oz of cream cheese tonight and add some shredded Mexican blend cheese to it. I also added Ranch style beans with Black beans. 1 packet of regular Ranch dressing, 1 packet of Taco seasoning and 1 packet of Fiesta Ranch along with the onion & corn. Just threw this in the crock pot, and I just wanted to say that the fiesta ranch dip stuff smells amaaaaazing. <3 Like, I would season french fries with this stuff, lol! But, the chicken and other ingredients, I just dumped in, similar to the picture, and it doesn't LOOK good so far, but we'll see how it goes. :3 I've got it on High right now, I'm gonna let it go for four hours like the directions say, but I'm nervous because my crock pot might be a bit colder than others because the High settings never get it done in the amount of time that the recipe says lol! If it's not done in the four hours, I'll turn it to low and let it go for maybe an hour or two.

Yes, you definitely want the chicken to cook fully! If I’m using fresh boneless breast I will cut them into strips first or using chicken tenderloins will help cut down on the time.

You have liquid from the corn (undrained) and I only drained 1/2 of the liquid out of the black beans. The can of rotel or diced tomatoes will also add liquid. So you’re good.

After 6 hours on low, my half breasts of chicken shredded in a flash with two forks. I find these easier to wash in most circumstances than my immersion blender or mini-mixer. Just a matter of opinion.
I also added some “Mexican blend” shredded cheese at the end of cooking time and sprinkled on individual bowl when encouraging “first tried” for picky kids and let them scoop up rice-added portions with tortilla chips. This definitely closed the sale for approval.

I always just throw all the ingredients in at the beginning. You have to cook it a bit longer, but it’s perfect since I work nights & its finished when I wake up to go to work. (I put it on before I go to sleep that morning & its ready by the afternoon).

I made this by recipe. Only I boiled my chicken first on the side to cut cooking time in half then mixed it all in the crock pot for about an hour-ish. My kids liked it but for new needed some salt and pepper. Pretty good! Will make again!

Made this for my ICU nurse coworkers for lunch today and it was a huge success! I drained the corn, but left the juice from the rotel to add more flavor. Smelled amazing! Started with frozen chicken breasts at 8am and was ready for lunch at 12:30. Chicken wouldn’t shred with a fork, but it cut easily with a knife and fork. Scooped it out, cut it, and threw it back in. Oh my. So good. There are only 2 of us, so I get 3 meals out of this. I first used the leftovers to make stuffed green peppers topped with lots of cheese. Yummy. I froze the leftover chicken mixture and used it a few weeks later as a crescent roll stuffing. Served with salsa for dipping. Great for lunch.

I didn’t drain the tomatoes or beans either as it only specified to do that with the corn. I had a lot of liquid. Kind of soupy. I actually made it yesterday for tonight so I’ll see how it is and if I need that much liquid.

You should have only drained the beans (and rinsed them). I believe different crock pots can affect how this all cooks up. I also have experienced some chicken being juicier then others so this could play a role in your extra liquid. Hope it turned out for you!

Not to worry. When I shredded the chicken with forks. It absorbed the liquid. Now I wish I had not left the lid off as it could have used the extra liquid. Next time… Let’s see if it’s a winner at supper tonight.

Ok, I saw this recipe today on fb, and couldn’t stop thinking about it…at lunch I ran by the store, got the ingredients, and threw it in my crockpot. Like some others, I didn’t drain the beans or rotel either…hoping it isn’t too soupy as I used frozen chicken breasts (which will have water as well)…we’ll see. I love the idea of using leftovers in crescent rolls…I’ll try that one for sure…also the stuffed peppers. My store didn’t have the fiesta ranch so I used McCormick’s Fahita seasoning pkt.

I used plain dice tomatoes and regular ranch powder dressing mix and frozen corn. There was enough liquid from the beans, tomatoes and chicken. Cooked Spanish rice and warmed a flour tortilla put some rice with chicken mixture on top then shredded cheese. Served it side of sour cream. Family loved it said this is a keeper.

The directions on the recipe said nothing about sprinkling the dressing mix over the top. I put everything into the crockpot in the order it was listed in the recipe I did drain and rinse the beans, but didn’t drain the Rotel? Sure hope it turns out okay. I made this tonight for dinner. I followed the directions exactly. Cooked on high for 4.5 hours. Although the taste was decent it was extremely soupy even after I poured half of it off. The chicken shredded very easily. It just felt like it should be a dip or inside enchiladas or something. And the cream cheese was curdled all over it. It sounds delicious but NEVER EVER put frozen chicken in a crockpot – you risk food poisoning since it will be at an unsafe temperature long enough to breed bacteria. While later hot temps may kill the bacteria, they will have produced toxins (think bacteria poop) that are unaffected by heat. The toxins are what will get you. If you have never been bothered by this, consider yourself fortunate. It is like texting and driving – you will eventually get in a wreck. Check out the USDA info on this.

Just made this today. I couldn’t find Fiesta Ranch so I substituted with a packet of regular ranch and a packet of taco seasoning and I used a jar a salsa in place of Rotel. Also I drained the corn (believing the salsa would be enough moisture) and it came out perfect. Put it on tortillas with some diced tomato and shredded cheese. Tastes amazing….Thanks for recipe

I let the chicken cook an hour by itself before adding the other ingredients because it was frozen. I used chicken stock throughout for extra moisture. Drained the corn and swapped the beans for Mexican rice about 2 hours in so it wouldn’t get too mushy. Used half of the cream cheese about 3 hours in and mixed it in so it wouldn’t curdle,then added an equal amount of Velveeta. It makes a lot so I have lunch for the next couple of days.

The first time I followed the recipe and sauce was way too runny. It’s much better if you drain everything: Ro-tel, corn and beans.

How much and what kind of rice do you use? Do you put it in after shredding the chicken? And then serve it on tortillas?

I add four cups of chicken stock. All in the pot at the beginning, even the cream cheese. Let it all cook together, stirring with a whisk every couple of hours to help the cream cheese blend. End of cooking time shred the chicken, serve in bowls with tortilla strips on top. Makes excellent tortilla soup!

Made this the other day but turned it into a chicken tortilla soup ? Doubled the cans of beans, corn, and rotel. Added a packet of ranch and chicken tacos. And 2 cups of chicken broth. Last 30 mins threw in cream cheese and served with tortilla strips.

I made this for dinner tonight. Only change I made was I added 2 t. Taco seasoning. I took the left overs and rolled them in soft tortillas. Covered with salsa and cheese and its ready for dinner tomorrow or the day after. So good!

Have this in the crock pot right now ! Drained about half the liquid from the corn. Could not find the fiesta ranch mix, so I added about 1 tsp of dried ancho pepper to the regular ranch

I’ve been looking for the original recipe after seeing on a fb group! Thank you for this recipe! Now, I wanted to share what I added, from another shared version…
I added diced green peppers and onions, also can of pinto beans (shared recipe added that) ive used taco seasoning too in a pinch. Tasted good.
I DID use frozen (shared recipe didn’t say either way). And I did in IP, which made more liquidy. But we ended up eating like a soup. It was Excellent! My teen just used like a dip, and dunked tortilla chips into it. She loved it!
I then decreased liquid another time I made, then rolled into a tortilla, poured some on top even. Added shredded cheddar cheese.
So many options with this recipe. Thank you again for creating!

I want to make this in the instant pot. Do I add the cream cheese in with everything else to cook, or stir it in the end? And do I let the instant pot naturally release or do a quick release myself?
