If you are like me or have been shopping at Kroger, you might have a fridge full of yogurt! If your children have not eaten it all yet, here are some recipes for things to make with yogurt!
Banana Pancakes!
These pancakes are tender and tasty, sure to be a hit with the kids!
| 2 | cups (280 g) unbleached all-purpose flour, sifted |
| 1T | sugar |
| 1 | tablespoon (15 g) baking soda |
| 8 | ounces (240 ml) fat free plain yogurt |
| 1 | large very ripe banana, mashed |
| 1/2 | cup (240 ml) skim milk |
| 1/2 | tablespoon (7.5 ml) canola oil |
| 1 | teaspoon (5 ml) vanilla extract |
| 4 | egg whites, beaten to soft peaks |
| refrigerated butter-flavored cooking spray |
- Combine the flour, sugar substitute, and baking soda in a large bowl. Stir to combine.
- Add the yogurt, banana, milk, oil, and vanilla. Stir until just moistened.
- Gently fold in the beaten egg whites to complete the batter.
- Lightly coat a nonstick skillet with cooking spray. Working in batches and using a ladle, make 4 inch pancakes. Cook until the bottom is browned and bubbles come to the top of the cakes. Turn and continue to cook until browned. Keep warm while you cook the rest of the pancakes.
Avocado and Yogurt Dip!
Not your average guacamole, this dip includes shallots, bell peppers, green onions, and fresh herbs. Serve with tortilla chips.
Prep Time: 15 minutes Ingredients:
- 2 to 3 shallots, coarsely chopped
- 1 small sweet red or white onion, coarsely chopped
- 1/2 small green bell pepper, coarsely chopped
- 2 tablespoons chopped green onion tops
- 2 large ripe avocados, peeled, pitted, and coarsely chopped
- 1-1/2 tablespoons fresh lemon juice, or to taste
- 1/2 cup plain yogurt
- 1/4 cup mayonnaise
- 1 teaspoon crumbled dried dill or tarragon, or to taste
- 1/4 teaspoon salt
Meatloaf!
I like this recipe because it is a really good way to stretch ground beef. It has a lot of flavor and is really good for you as well. It has rice, vegetables, mushrooms and yogurt.
Prep Time: 10 minutes Cook Time: 1 hour
Ingredients:
- 1 pound lean ground beef
- 1 cup cooked rice
- 1 egg
- 3/4 cup plain yogurt
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped green bell pepper
- 1 (4-ounce) can sliced mushrooms, drained
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- Tomato and onion slices (optional)
Preparation:
Combine ground beef, rice, egg, yogurt, onion, green bell pepper, mushrooms,Worcestershire sauce, salt, and pepper. Shape into a round loaf; place on rack in shallow pan. Bake at 350 degrees for 55 minutes. Top with tomato and onion slices. Bake 5 minutes longer.
Yield: 6 servings
