As I laid in bed last night, listening to him breath, I thought of two things that I loved about Paul that I thought I would share.

1. We always laugh. Even when everything sucks we always end up laughing. We mostly laugh at the kids, not in a mean way, but yet still laugh at them! Like, “can you believe that really just happened?” We always have fun. The laughing and fun go hand in hand. Last summer we had a horrible camp site, basically we camped in a parking lot on gravel, it really sucked. But we figured if we didn’t tell the kids how bad it was they would never know. So if we pretend like it is fabulous they will think it is. And we did. We had a great time, and still laugh about it. We have been vomited on and pooped on more times than I care to think about, all funny stuff. We can look back and laugh, and even did at the time, about scraping up change to buy gas in college. We also laughed while we walked Tucker as a newborn around Wal-Mart at 2am because that was the only place that he wouldn’t scream, and wondered if we would ever be able to buy name brand items like, Zip Lock and Del Monte! We laugh when we buy those now because I use coupons and that really tickles us for some reason.

2. I love Paul because he is never critical of me. He has never complained about the house being a mess. If he can’t find a place on the couch to sit down, he moves the clean clothes to the other couch, or puts them away. He has never complained about a meal that I have made, or more importantly have NOT made! He has never said anything about the 5 lbs. from EACH of our children I still have to loose. He never says a word when I start a new project that he knows he will have to help finish. He has never complained when we have gone days without using our kitchen table because I have my painting or jewelry spread out all over it. I really can’t think of anything that he has ever asked me to do. If I need something he always makes it happen. I really appreciate the ‘freedom’ that he allows me to do the things that I want to do. Last fall I wanted to take a jewelry class that I could only find offered in Austin. He made it happen, paid for it, watched the kids, helped me out the door at 5am so I made it there by 9am and he took care of a still nursing baby for 15 hours while I was gone.

Dollar General: New Coupon Policy!

Do you have a Dollar General? You might want to take a look and see if you have one around. Go HERE to see if you have one.

Recently they have changed their coupon policy and it is really generous. BUT, just like everywhere else, their cashiers might not be up to date or trained on the new policy. So take a copy of the coupon policy with you just in case! Dollar General now accepts printables and they do allow you to stack store coupons with mfg coupons!

Chocolate Chip Cookie Recipes from Readers!

Traditionally on Sundays I always make cookies for the kids. It is a fun time to try new recipes. I want to thank everyone for sending me their chocolate chip recipes this past week. I am going to try all of them, these are the first 2 we made.

I liked this one because it was simple and had oatmeal.

This one is from Pam!

Cream – 1 Cup Margarine

1 Cup Sugar

1 Cup Brown Sugar
Beat in – 2 eggs
2 teaspoons Vanilla
sift together and stir in-
1 1/2 Cups flour
1 teaspoon salt
1 teaspoon baking soda
add 3 Cups Oatmeal
1 Pkg. Chocolate Chips
1 Cup Chopped Pecans
Stir til mixed together; bake at 375 for 10 – 12 mins. These are my husband and kids all time favorite…
These were fantastic!

This next one scared me a little because I have never had any luck with melted butter! It also called for 1 egg and 1 egg yolk. Having used all my eggs earlier in the day I used my powered eggs from my food storage. I think they turned out perfect!

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups semisweet chocolate chips

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
  2. Sift together the flour, baking soda and salt; set aside.
  3. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
  4. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

There are several really good coupons this weekend. The B1G1 Air Wick Aqua Mist makes for a nice deal when paired with a $1/1. And surprisingly- a few coupons that typically set a size limit or exclude trial sizes do not! I was really surprised the Purell does not- but it doesn’t!

A few weeks ago I had a ton of these things laying around. They looked like trash so I threw them away.

Big mistake.

Apparently, they are all the rage right now if you are a 4th or 2nd grade girl. Remember garbage pail kids? Well, I have officially ruined my girls lives. All the ones that they had been collecting and trading with friends I tossed. The worst part is that they were actually put away and not lying around. I got a wild hair and decided to clean out their cubbies, figured they were junk and in the garbage they went.

Does anyone have any idea where you can buy these things? I looked at Walmart and CVS and didn’t see them. The girls aren’t sure where to get them and I am not desperate enough to order them online.
