This week is a happy one for me! We are finally packing (again) and getting ready to move this weekend into our house!!! Life will be getting back to normal! It is also sadly the last week of school at the preschool where I work. I will miss the kids through out the summer, but am soooooo happy to have the time off and the time to spend with my kids. I love summer time. I LOVE having my kids home.
Monday – It is my birthday and so I get to have whatever I *want*. NOT! Actually we are having ham and cheese on croissants, fruit and chips while watching little league baseball. Pretty much a perfect evening if you ask me! I think I am going to make PW’s Milky Way Cake.
Tuesday – I am sticking a pork loin in the crock pot for pulled pork sandwiches. Got the pork loin from Kroger last month for REALLY cheap and froze a bunch of them, plus we have the coupon for Sweet Baby Rays that came in the RP this weekend.
Wednesday – Mini Meatball Sandwiches These are a serious crowd favorite here! I cheat and use pre-made meatballs frozen from the store if I am in a hurry!
Thursday – Turkey Burgers. This is a recipe that we like, my kids don’t mind turkey at all. Also the buns featured are the only kind that we have used in the past year, even my husband likes then. Try it out!
Friday – Homemade Pizza! We have pizza on Fridays, I always make it homemade and use ingredients in the fridge. This is the easiest and best homemade pizza dough recipes I have ever used. I can get it made and in the oven quicker than ordering it out. It is BETTER and cheaper homemade!

The low sugar, low carb thing is actually relatively easy…when it is just you :). The hard thing is to avoid “artificial sweeteners”. The good sweeteners include truvia (frequently has a Q) and Sobe life water light sweetened with erythritol which is part of the mega event at our Kroger store. Good luck, I am rootin’ for ya!

Tiffany, I loved your comments last week about your kids wanting homemade pizza every Friday. I started making homemade pizza two years ago and we have it EVERY Friday too! I TRY to switch it up but my kids start a riot if we don’t have homemade pizza on Friday. It makes our menu planning a little easier! 🙂

Girl, you are preaching to the choir about the sugar and carbs. I could live on cinnamon rolls and chocolate! Another problem is I like EVERYTHING. There are only about 3 things I won’t eat – liver, oysters and …well, maybe just two!

Turkey Chili Taco Soup
Gina’s Weight Watcher Recipes
1.3 lbs 99% lean ground turkey
1 medium onion, chopped
1 bell pepper, chopped
10 oz can rotel tomatoes with green chilies
15 oz canned or frozen corn, drained (optional)
15 oz kidney beans, drained
8 oz tomato sauce
16 oz fat free refried beans (I use 1 can pinto beans)
1 packet taco seasoning (you can use 40& less sodium)
also use 1 packet ranch dressing/mix
2 1/2 cups fat free low sodium chicken broth
In a large pot, brown turkey on medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add onions and pepper and cook 2-3 minutes. Add tomatoes, corn, beans, tomato sauce, refried beans, taco seasoning/ranch seasoning and chicken broth. Bring to a boil and simmer about 10-15 minutes.
Serve with a few baked tortilla chips or on top of rice and cornbread and your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions, onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals

Besides being a couponer and homeschooling mom I am also a weight loss coach. Not too many programs pass my inspection, but I recently read the Carb Lovers Diet and it makes the list! It’s different than most diet programs and gives you a whole list of carbs that are good for you. You should try it out. If you lose weight with carbs, this might be just the thing to help you lose what you want to lose.
