This week I am getting everything done early in the week and my shopping done tomorrow. Why? Because I want to spend more time with my kids this week and I HAVE to get more organized so I can do that!
Last week you guys sent in some really good crock pot recipes. Amanda and Pamela posted almost the same recipe that they swore was super easy, it was, and that is was good, it was AWESOME! Because they were similar I knew it must be a good recipe. Thank you, will be adding this to the rotation especially because every ingredient is something that I have on hand.
Crockpot BBQ Chicken
So easy and everyone loves it!
6 frozen skinless, boneless chicken
1 (12 ounce) bottle barbeque sauce 1/2 cup Italian salad dressing
1/4 cup brown sugar
2 tablespoons Worcestershire sauce
Put the chicken in the crockpot and mix all other ingredients together. Pour the mixture over the chicken and cook 3 to 4 hours on high or 6-8 on low.
** I have a ton of frozen chicken that I got for SUPER cheap, I will tell you how in a few days because you guys will be able to get the same deal!
Sunday – Mexican Creamy Crock Pot Chicken ( from Lindsay )
Mexican Crockpot Creamy Chicken
Ingredients:
1 lb Boneless skinless chicken breasts (you can put them in frozen)
1/2 cup of salsa
1 bag frozen sweet corn
1 can of black beans, drained and rinsed
1 can of Rotel Tomatoes with Green Chilies
Chili Powder (I usually put 1.5-2 tbsp)
S&P
1/2 block of reduced fat cream cheese
1 small onion diced
Directions:
Put chicken in crock pot and with all ingredients EXCEPT cream cheese.
Add in chili powder and S&P to taste
Cook for 3-4 hours on high, and 7-8 hours on low.
Shred the chicken and mix it all along with the cream cheese until melted. Let cook for another 15-20 minutes until heated through.
Serve over rice or in tortillas as tacos/burritos.
Monday – Beef Tacos. I am also planning on having chicken left over to have chicken tacos. Too much Mexican in 2 days? Naw! My kids love it!
Tuesday – Sandwiches, just plain old turkey and cheese ( on Goldfish bread!) chips and fruit. We have “stuff” tonight so I want it to be easy because it is HOT outside!
Wednesday – Pan Fried Pork Chops I am posting PW recipe because her pictures are better then mine, but I do have this recipe posted on Mylitter. We make these often as they are easy and the kids like them, plus I have a pack of pork chops in the freezer.
Thursday – I was going to go to Sams club today and I will probably grab some of the rotisserie chickens they have for cheap and make a dinner out of that.
Friday – Pizza, homemade or I have a Groupon I need to use.

Tonight for dessert I made a Lemonade party cake and it was DELICIOUS!! And super easy to make! If you like lemon cakes you will LOVE it. Heres what you need
1 Lemon cake mix
3eggs
1/3cup oil
1 1/4 cup water
3/4 cup powdered sugar
1- 6oz can of frozen concentrate lemonade
1 can of frosting lemon or whipped vanilla
(I used cool whip I figured the cake would be sweet enough with all that powdered sugar)
Ok so make the cake just as the box says and bake it according to the 9×13 pan directions
let lemonade thaw out and mix the powdered sugar in with it
after cake is done baking let it cool for about 15min
use a long fork and poke holes all over it ever inch or so
then poor the lemonade/P sugar mix over the top evenly let it seep in then chill for 2 hours
after its cooled frost it and serve
I use lemon peel as a garnish along with yellow decorating sugar crystals
its super yummy and my entire family LOVES it =]

Oh And I’m thawing out some chicken breasts right now to make your BBQ crockpot chicken We will have BBQ chicken sandwiches I have some nice sandwich rolls that I got from Sam’s club last week 1 of the few things I buy there thanks for the idea =] Monday’s are my LONG work days so easy is always appreciated

I’m totally going to make that crock pot BBQ chicken recipe up above. I have SO MUCH bbq sauce that I’ve been trying to figure out how I’m going to use it all!
Monday: steak and veggie kabobs
Tuesday: spaghetti w/homemade meat sauce
Wednesday: cubed steak w/biscuits and gravy
Thursday: garlic cheddar chicken w/pasta roni & veggies
Friday: mini-pizzas (on English muffins)

Tiffany, I tried the BBQ chicken recipe yesterday and it was good…all 7 of my kids loved it. We ate it over baked potatoes. On Thursday (last week) we tried the chicken recipe that added taco seasoning and rotel tomatoes to and we loved that one too. I am always game for a quick and easy crock pot recipe…thanks to all who posted them!

we like to get boneless chicken tenders, cut into bite size pieces, dip in egg, then dip (roll) in crushed corn flakes and pan fry (or bake) for homemade chicken nuggets

Thanks for the recipe, I didn’t have any chicken breast, it’s been too expensive to buy of late. But I have been getting whole chickens for .59/.69 lb, so there are a lot of those in my deep freeze, and that’s what I used in this recipe.I hope it turns out as yummy as you described!!! Also, I’m on pins and needles about the chicken breast deal you mentioned, looking forward to buying some cheap chicken breast-I don’t have any in my freezer. Thank you!

Another easy recipe. Take chicken breast and slice into strips. Dab with sauce – I like hot sauce but I use bbq for the kids. Place in a broiler about 4 min each side. Serve with french fries, celery, and ranch dip.
