The house that we are leasing until we can move into ours, does not have a working oven. Also, only 2 of the stove top burners, of course the 2 smallest ones work. I have been getting creative as to what we are having for dinner. If it involves going in the oven I have to borrow the oven next door (they are friends) but that is a hassle!
You don’t realize how often you use the oven until you don’t have one!
Sunday – Easter dinner. We had ham, mashed potatoes, braided bread ( my SIL make it, awesome) green beans, and deviled eggs. For dessert, angel food cake with strawberries and whip cream.
Monday – Stuff. When ever we have left over meat this is what I make! I have no other name for it but Stuff, it is a potato mixture and whatever else i have in the fridge, I am using ham from Sunday!
Tuesday – Corn Chowder with rolls.
Wednesday – One of our favorites… Taco Salad with Catalina dressing. I am sad that this recipe did not come over well. When I moved from blogger over to WP a lot of my pictures did not make the move over, this is one of those. I will add new pictures when we make this on Wed.
Thursday – Fish Tacos at Wahoo’s. We are eating out I am sure, we have tons of stuff this night!
Friday – Homemade pizza.
Saturday – After a super busy day of games, a coupon class and yard work, the husband and I have a date so we will be eating out!

Just wanted to say thanks for posting this menu. I made “stuff” for dinner tonight using some of the leftover ham from yesterday. Added a side of peas (Libby’s bought with the coupon you had posted the link to:) and dinner was served. It was delicious.

I’m just now trying to plan out meals ahead of time and it’s been nice this past week because around 4:30 I’ll look on the fridge to see what I planned to make and it takes the guesswork out of it and I feel a little more relieved and confident about dinner and it’s with stuff we already have! We were at family’s for easter, and tonight I made rice and filipino adobo (my hubby is filipino so he was happy), and mixed veggies. For the rest of the week: Chicken Enchilada Casserole, Pizza Night ($1.99 mark down from the grocery store last week), spaghetti (noodles with a jar of ragu, hehe) and LEFTOVER NIGHT (my favoritie)!
