We are in Iowa for spring break. I love it here, I could not happier! I love the people, the smells, the food…. I never eat better than when we are with my family. All my aunts, cousins, and Grandma are AMAZING cooks. I always leave with a book full of recipes, and I will share them all with you guys over the next month or so!

Today I am posting the Cheeseburger soup recipe. OH. MY. GOSH! Seriously, why have I not had this before?! Try it and you will be the rock star in your house!
MONDAY – Cheeseburger Soup – Stove Top – This is seriously good! The key is to do the butter and flour part. I don’t even want to know the calories on this one! Recipe Below. Serve with some crusty bread.
TUESDAY – Chicken Poppyseed Casserole – Oven – This is a really good and very inexpensive recipe to make. I posted it, showing how cheap I can make it and how I get the kids to help. It costs about $1.45 a serving for the main dish. I serve this over rice or pasta, and with a salad.
WEDNESDAY – Chicken Taco Soup – Crock pot or Stove Top – I have posted this one before and it is always a hit at our house. Plus I can put it in the crock pot or do it on the stove top. This is also a very inexpensive dish to make and I usually have everything on hand. Serve with corn bread, or tortillas.
THURSDAY – Easy Chicken Pot Pie – Oven – This is also a under $2 a person serving recipe. It is very good and you can always find printable coupons for the crust and a few other items. The total cost at my Walmart for the ingredients was $11.57. That is under $2 a serving as this serves 6 for a pie. You can double it and put it into a 9×13 pan.
FRIDAY – Homemade Pizza – Oven – Sorry. Not very original of me I know! But this is something we can make for family and have a lot of to make everyone happy! Plus, is another cheap meal and that seems to be the theme this week!
Cheeseburger Soup Recipe
Ingredients
- 1/2 pound ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup chopped celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 4 tablespoons butter
- 3 cups chicken broth
- 4 cups cubed potatoes
- 1/4 cup all-purpose flour
- 2 cups cubed Velveeta
- 1 1/2 cups milk
- 1/4 cup sour cream
Directions
- In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
- Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
- Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
- Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.
