Our spring sports season starts for us this week. I know some of you are buried under snow right now, but remember that in August when it is 80 and we are on our 100th day of over 100 degrees 🙁
Monday – Taco Pasta Dinner (skillet) – I have posted this one a few times and you guys always love it! I cooked all weekend so I need an easy dinner idea for today!
Tuesday – Easy Chicken Parmesan (casserole) – “This chicken Parmesan is done casserole style (so, no breading or frying!), but still offers up that irresistible combination of tender chicken, crunchy/cheesy coating, and flavorful sauce.”
Wednesday – Santa Fe Chicken (Crock pot) – Shasta posted a recipe from Skinny Taste, called Santa Fe Chicken, then another reader commented she had tried it and passed it along to her sister. This one is AWESOME, Paul made it a few weeks ago and it ROCKED!
Thursday – Pepperoncini Beef Sandwiches (Crock Pot) – This recipe was given to me by Catherine F. from Cedar Falls. She has 8 kids and I can’t tell you how much I looked up to her when I had my first. She has no idea how much she taught me and how much I admire her. Anyway, she made these AMAZING sandwiches and they are so easy and SO GOOD I finally wanted to share them with you. They deserve their own post and so maybe later this week I will do that but add them into your menu this week you wont be sad!
Friday – Foil Pack Chicken and Broccoli (Oven) – This one I have bookmarked and wanted to try for a while. It looks super easy and again, I have everything on hand. This looks like a good one for the kids to help with also!

Pepperoncini Beef Sandwiches

Ingredients
- 1 (4 pound) beef chuck roast
- 4 cloves garlic, sliced
- 1 (16 ounce) jar Pepperoncini (these are NOT spicy)
- Salt and Pepper to taste
- BV beef flavoring ( if you can find it, if not that is ok)
Directions
- Make small cuts in roast, and insert garlic slices in cuts. Place roast in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat.
- Cover, and cook on Low for 6 to 8 hours.
- Shred beef and serve on crusty rolls with provolone cheese!
** If you area able to get your hands on some BV ( beef flavoring) this is what really adds a lot of flavor. BUT, they do not sell it in TX. If you have a Hy-Vee you might have it. If you can get some add the jar of sauce to the crock pot and shred the beef into it. SOOOOO GOOD!

The entire week looks awesome Tiffany! I printed 3 of the 5 days. I’m not a fan of white sauces such as Ranch or anything sour cream or cream cheese based (I know I’m wierd!). But the other 3 sound wonderful!!

Tiffany in the pepperoncini beef recipe do you add the whole bottle of BV beef flavoring to the crock pot while cooking??? We have Hy-Vee so I am going to look for this.

Yes you do, I also take a little water and “rinse” out the bottles and dump that in!

Being that I too am in Texas (45 minutes South of Houston)…..I won’t be able to get my hands on this 🙁 Amazon is out too!!! Will just another brand of Beef Flavoring work or is it like when you eat Blue Bell, then afterwards nothing else compares…lol 🙂 ???

YOu can use nothing to replace it and it is still really good! But if you have a favorite beef flavoring try that!
