For dinner Wednesday night we had “company” over and so I made a pasta dish that I had in a restaurant once. Or at least tried to recreate it. Then I had to leave and run a kid to swimming before we ate and and missed all of dinner. 🙁
When I got home I asked how dinner was?
“It was AWESOME!!” my husband says.
“Did the missionaries like it?” I ask.
” They called it mancaroni, and wanted to know if we were busy the rest of the week. They also wanted to know if you would make it every night they came over.”
“So everyone liked it? Where is the rest?” I ask.
“Um, we thought you ate. There isn’t any, we licked the pan. Seriously, it was so amazing!”
It was also really easy and doesn’t have a name. Let’s call it “Mancaroni” for now!
Take a brick of cream cheese and one pint of Heavy Whipping cream and start heating them up in a pan. Add 1 1/2 cups swiss cheese and 1 tsp each garlic powder and onion salt. Do not boil, just melt all together. I added 2 T. basil pesto to mine and.
Cook some chicken, or pull some off a rotisserie one from the store. I tossed mine in the oven for 35 minutes and then chopped them up.
Then chopped up some ham and bacon, about 1 cup to 1 1/2 cup each. I used pre chopped ham and pre cooked bacon just because I had it on hand.
Cook a 1 pound box of pasta, you can use really any kind I suggest penne. Then layer the pasta in a 9×13 pan and spread the 3 meats over it.
Next take your Alfredo mixture from the stove and pour that over the pasta and meat mixture. Add 2 cups panko bread crumbs over the top and put it in the oven for about 20 minutes until the top is getting a little brown.
This might not look like much, but with a salad, and bread it was AMAZING and EASY, your little ones will love it!

If you use a whole pound of noodles, this will make more than enough. I make a similar dish and I usually use a 9 by 11 size pan for this. If you are worried about having enough, get some bread and salad to go with.
Yum! I’ll have to make this for Dan and then break it to him that he is no longer the missionaries’ favorite dinner appointment, lol!

I’m going to try it with some spinach or peas in it, looks yummy. And I agree..what’s wrong with cheese. It may be heavy but that’s why you balance it with a salad.

I made this yesterday and the kids went back for seconds. What more could I ask for. This was great! I didn’t use swiss cheese though I used an Italian blend instead. I used Italian style breadcrumbs along with the panko breadcrumbs. Didn’t have onion salt on hand so I’m sure it would have been even better (If that’s possible) had I used it.
Thanks Tiffany!!! Really liked this! I did a modified version with what I had in the house. I think you would be proud. No ham or cream. Used extra Chicken, 1/2 mozzarella and 1/2 mild cheddar and regular milk plus added some cut tomato that needed to be used. The family loved it! It was very filling with a salad. Even had it the next day for lunch.
