You guys have some seriously good recipes out there! I wanted to spend a few posts getting and compiling some good recipes covering different topics. This week I wanted to do Chicken and Crock Pots! I have a bunch of frozen chicken and I am trying to get back to school all together so I am really busy, I want to stick something in the crock pot in the morning and have it done when I get home. We also have company coming over tonight and so is it possible to serve a crock pot dish to company?
One of my kids favorite chicken croc pot recipes is for Chicken Taco Soup. I struggle with having soup in the summer time but the kids don’t care and if they eat something without complaining I am in!
This recipe feeds my family for under $1 a person. I substitute apple juice for the beer.
Chicken Taco Soup (From All Recipes)
Ingredients
- 1 onion, chopped
- 1 (16 ounce) can chili beans
- 1 (15 ounce) can black beans
- 1 (15 ounce) can whole kernel corn, drained
- 1 (8 ounce) can tomato sauce
- 1 (12 fluid ounce) can or bottle beer
- 2 (10 ounce) cans diced tomatoes with green chilies, undrained
- 1 (1.25 ounce) package taco seasoning
- 3 whole skinless, boneless chicken breasts
- shredded Cheddar cheese (optional)
- sour cream (optional)
- crushed tortilla chips (optional)
Directions
- Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
- Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.
Now, this is one of my favorite things to do with a chicken in a crock pot, it turns out awesome and is cheap!
How to cook a rotisserie chicken in your crock pot:
First thing to do is clean the chicken and get all the gunk out of the inside. Then crunch up several sheets of foil to make foil balls about 1 1/2 inches in diameter. Place foil balls in slow cooker to cover bottom. You do NOT want the chicken to touch the bottom and sit in the juices. People use potatoes also for this, but I think they get too soft. After you clean the chicken out and wash it off, make sure it is dry and place in the crock pot. Cover it with spices, a lot of them! I use Lowery’s, paprika, and garlic powder. Then cook covered, for 4 hours on high or 8 hours on low. There is no need to open the lid to check on it during cooking. Now you have your own rotisserie chicken!

So far, each meal I have made, the family came back for seconds and asked that I make it again. Her serving sizes say it feeds family of four, but I’d say it’s more like three adults, four is stretching it. Enjoy!!!,

Put the chicken taco soup recipe in the crock pot just a few minutes ago. Who cares if it is over 100 degrees today. 🙂 The kids will enjoy it, and I love having supper already taken care of this early in the day. Thanks for the recipe!!

This is a family favorite, it is healthy and yummy. We have put it over rice, or ate it like salsa with tortilla chips. It is so easy, it normally feeds all five of us, plus leftovers ad I freeze half for later. I like to use the cooked bones from the crock pot rotisserie chicken and make a chicken stock. Just put the bones back in the crock pot and add carrots, celery, and onion if u have it. Then fill the crock pot with water and cook on low overnight. U can freeze it for later or I like to make chicken soup with it.

The only recipe that I make regularly is just like this but with no beans and it uses enchilada sauce so it is called enchilada chicken 🙂

My fav is chicken, potatoes, & carrots in the crockpot–super cheap & super quick to put together.
4-5 frozen chkn breasts
1 bag of baby carrots
3-4lbs peeled 1/4’d potatoes
season with Nature’s Seasoning
In a bowl stir together:
1 can crm of mushroom soup
1 can of crm of chkn soup
1 can of chkn broth
pour over all items in crockpot
cook on high-4-5hrs or low for 8 hrs.

I know this is somewhat off topic but did you say that you roast 2 chickens each week so you will have less temptation to go out to eat?If so would you give the recipe ideas you had. We have 6 children at home(2 are grown) and I need some fresh ideas. Thanks .
