The other day I wanted to make some fun cookies for St. Patricks day coming up. I had a box of Lucky Charms (or you can buy marshmallows in bulk) and knew there could be something done with those. I was running out of ideas and time, so I made my standard sugar cookie recipe, and homemade easy frosting.
I tossed the Lucky Charms on the top and left them on the counter completely unsatisfied in my design. Design, might be a stretch… I put cereal on a cookie.
Fast forward to the kids all getting home from school.
They were COMPLETELY freaking out over the cookies! I was almost embarrassed. I was shocked at how much they loved them and how they were asking to bring them to school for their friends.
Sometimes as a Mom, we think things have to be so complicated for it to be a success. My simple cookies brought so much happiness to my kids I was almost emotional. Kids love Holiday’s and any reason to celebrate and do something different. Coming home to cookies with cereal created so much joy for them and in return for me, that I promised myself to try and remember the moment and think to do these things more often.

Very cute — I really like the looks of your Sugar Cookie recipe. Have you ever tried subbing any other flavorings for the vanilla? I’m wondering if it would be OK to substitute some peppermint extract for a St. Patty’s Day version, and whether that would be better in the cookie or the frosting? Both might be a bit too minty, but I think one or the other could be great.
