As I declared on Facebook, we have been eating out way to often lately. The thing is when we eat out we don’t always spend a lot, but it isn’t always the best food. Plus, quite honestly my kids and I would rather eat at home. For some reason in the summer time it is hard to motivate myself to make dinner.
I am going to start back at Sunday because we had my kids favorite side dish and that is “funeral potatoes”. If you have not made this traditional side dish you are missing out! Packed FULL of calories and fat this dish is true comfort food!
I bought Corn Flakes last week, the generic brand was BOGO, so I am trying to use them up this week. I am making the funeral potatoes, Corn Flake Chicken and cookies that call for Corn flakes this week!
Sunday – Baked chicken and funeral potato side dish. I marinated the chicken in mesquite seasoning first and it was awesome.
Monday – Went to Chilis for Kids Eat Free!
Tuesday – Spaghetti ( Paul made dinner)
Wednesday – Corn Flake Chicken
Thursday – I am going to make a crock pot chicken dish, any ideas? Help!
Friday – Homemade Pizza
- 32 oz bag of frozen shredded hash browns
- 2 (10 3/4 oz) cans Cream of Chicken Soup
- 2 cups Sour Cream
- 1 1/2 cup grated Cheddar Cheese (I like to use sharp Cheddar Cheese)
- 1/2 cup melted butter or margarine
- 1/2 c. chopped onion
- 2 cups finely crushed Corn Flakes
- 2 Tbs butter or margarine melted
Directions
- Grease 9×13 baking dish and preheat oven to 350
- In large bowl combine soups, sour cream, cheese, onions, and the 1/2 cup of melted butter.
- Gently fold hash browns into mixture.
- Pour mixture into pan.
- Combine crushed corn flakes and the 2 Tbs. of melted butter and sprinkle on top of potato mixture.
- Bake for 30 minutes.
- *If wanting to, you can use cubed potatoes instead of hash browns but you will need to increase baking time to

sounds like you haven’t had mexican this week – why not do the chicken in the crockpot w/ salsa or taco packet and then make shredded tacos or quesdillas.
This isn’t for the crock pot necessarily, but could be adapted. I like to boil and de-bone leg quarters, add BBQ sauce and put on a bun! It’s really easy and you control your ingredients. Homemade BBQ chicken sandwiches! You can refrigerate leftovers for easy lunches….if there’s any left! I also like to add coleslaw to the sandwich. It adds a nice crunch and it just really yummy ๐
I like Chicken Tortilla Soup…2 to 3 cans chicken broth, one can ranch beans, one can corn, two cans diced tomato (I like to use the green chile ones), one can condensed chicken soup, cooked shredded chicken (amount depends on how meaty you like it). Serve over crushed tortilla chips and top with your favorite toppings like…shredded cheese, sour cream, guacamole, chives, and/or fresh tomato. Serve with a fresh salad…yum yum!
I have made this pototoe dish and my kids love the corn flakes. Try increasing it to 3-4 cups along with more butter. This way you can used up the corn flakes quicker and everyone gets some of the topping.
I make a dish called
Easy Dump & Go Chicken
In your crockpot add
1 can cheddar cheese soup ( Can also use Nacho cheese)
1 can cream of mushroom soup
1 soup can of water
1 soup can of milk
1 pkg of dry onion soup mix
1.5 lbs of chicken
1 c. of shredded cheddar cheese – put on top
Cook on low for 4 – 6 hours
** Makes a lot of sauce — so I add about 1 1/2 – 2 cups of rice about 20 minutes before serving.
Can also add 1 can of Rotel for a mexican chicekn and rice — My 4 kids love it !!!
Mexican Crockpot Creamy Chicken
Ingredients:
1 lb Boneless skinless chicken breasts (you can put them in frozen)
1/2 cup of salsa
1 bag frozen sweet corn
1 can of black beans, drained and rinsed
1 can of Rotel Tomatoes with Green Chilies
Chili Powder (I usually put 1.5-2 tbsp)
S&P
1/2 block of reduced fat cream cheese
1 small onion diced
Directions:
Put chicken in crock pot and with all ingredients EXCEPT cream cheese.
Add in chili powder and S&P to taste
Cook for 3-4 hours on high, and 7-8 hours on low.
Shred the chicken and mix it all along with the cream cheese until melted. Let cook for another 15-20 minutes until heated through.
Serve over rice or in tortillas as tacos/burritos.
that should be “OR 7-8 hrs low”

Dump in crockpot
Frozen, skinless chicken breasts (we usually do 3-4, so you’ll need more!) (put in frozen)
1 can rotel
1 pkg taco seasoning.
Cook on low 6-8 hours (mine cooks fast, so usually 4ish hours.
Before serving, I dump in a can of black beans, drained. Shred chicken and serve over tortillas with cheese, sour cream, guacamole, or whatever you like!

Everyone in my family LOVES this… your family is as big as mine so I double it, but I will give you the single version….
Chicken in a Crockpot
4 boneless chicken breasts
1 pkg Italian seasoning (goodings, I think)
1/2 cup water
cook in crockpot for 5 to 6 hours on low.
Shred chicken inside crockpot or on cutting board and put back in crockpot.
In a saucepan on stove, melt 1- 8oz cream cheese and 1 can of cream of mushroom soup, just till melted and mixed. Add cream cheese mixture to the chicken in the crockpot and mix together. Serve over pasta, rice or bakes potatoes. You’ll have to let me know if your family likes it as much as mine. ๐
oops…the Italian seasoning packet was Good Seasons, not goodings. ๐
I have not seen this “funeral potato” recipe in YEARS! I had a friend from another state introduce me to that dish and had it a few times, then, never again. SO FREAKIN’ YUMMY!!
Zesty Slow Cooker BBQ Chicken:
Boneless/skinless chicken breasts
1 bottle of BBQ sauce (your fav flav)
1/2 bottle zesty italian dressing
1/4 c brown sugar
2 Tbsp worcestershire sauce
Place chicken slow cooker, combine all other ingredients in a bowl, stir, then pour over chicken. Cover & cook on high 3-4 hours or low for 6-8 hours. Remove chicken, using 2 forks shred chicken, add chicken back to sauce, stir. Serve on buns.
P.S. You can add more or less of any ingredient to your taste. I tend to add a large bottle of BBQ sauce.
Crockpot BBQ Chicken
So easy and everyone loves it!
6 frozen skinless, boneless chicken
1 (12 ounce) bottle barbeque sauce 1/2 cup Italian salad dressing
1/4 cup brown sugar
2 tablespoons Worcestershire sauce
Put the chicken in the crockpot and mix all other ingredients together. Pour the mixture over the chicken and cook 3 to 4 hours on high or 6-8 on low.
Seriously you HAVE to try this!! ๐
Forgot to mention on the BBQ Chicken that we love to put it over baked potatoes, make BBQ Chicken sandwiches, and BBQ Chicken Pizza with this recipe.
