My Children love ice cream cakes. I do too because they are very convenient at birthday parties, no scooping the ice cream and using two different utensils. They are also soooo dang expensive! I thought I would share with you my award winning directions on how to make a fabulous ice cream cake.
First, bake two cakes. I use only Hershey’s chocolate cake, you can find the recipe on the back of the baking chocolate box.
Second, frost the top of the bottom half of the cake. Again, using Hershey’s Chocolate frosting (the best) again, recipe on the box of powdered chocolate.
Opps, actually I do this the night before. Line your cake pan with saran wrap. Take your ice cream, we use only Blue Bell, we are snobs I know! Thaw it a little and press it into the same cake pans that you will be baking the cake rounds in. Freeze overnight.
Un-mold ice cream and place on top of cake. Top with last cake round.
Next, quickly ice the sides of the cake as best you can. This will not be real easy but you just need to get it covered a bit. Put the cake back in the freezer for an hour or so, you will be taking it out to finish icing when it has had time to freeze again.
Now the most important part…
MAKE SURE WHEN YOU CLOSE THE FREEZER.
~YOU KNOW THE ONE IN YOUR GARAGE WHERE IS IT 100 DEGREES,
YOU DON’T SLAM THE DOOR SO HARD IT BOUNCES BACK OPEN.
BECAUSE THIS IS WHAT YOUR CAKE WILL LOOK LIKE 1 HOUR BEFORE YOUR CHILDS BIRTHDAY PARTY…

Hahaha…. we ate it anyway! And it was good.Although I grabbed the bigger piece and Tonia got the one with all the ice cream and I was jealous… but I got over it cause it tasted like thin mints.

Hummmmm…this would most definitely happen to me. I usually cry or laugh, or both and then make the best of it, which I bet is exactly what you did! Well maybe not the crying and laughing at the same time, that might be only something I do! 😉

I would quickly run to the store, buy a couple of boxes of ice cream sandwiches, some hot fudge topping, and some cool whip. Get a container, put in one layer of ice cream sandwiches, a layer of hot fudge topping, and a layer of cool whip. Repeat until you get to the top layer and just top that with cool whip. You can also do this free standing, but I don’t know how well it will hold up in the heat. Put it in the freezer until just before you are ready to eat it. Good luck!!!

I just had to throw away about $500 worth off frozen food because my freezer was on 0! Some little one moved the number! I know the pain of a freezer in the garage!

I would first laugh, then pull out the purchased ice cream cake because….this type of thing ALWAYS happens to me!! Seriously!! So now I’m prepared. Sorry, I can totally relate! What did you do?

same thing happened to me before when I didn’t let the cake rounds cool completely before I assembled the cake and put it in the freezer. Your tip about putting the ice cream in the cake pans is brilliant; thanks!
