My family really loves lasagna and these Spinach Lasagna Rolls are a fun twist on the traditional lasagna. They are great for dinner or for a fancier appetizer for the upcoming holidays. They’re easy enough to make that the kids can help make them and they enjoy it.

Spinach Lasagna Rolls
Ingredients:
- 1 bag fresh spinach
- 1 container ricotta cheese
- 1 cup grated Parmesan cheese
- 1 egg at room temperature
- 1 package lasagna noodles
- 1 jar pizza sauce or marinara sauce
- 1 8 oz package shredded mozzarella cheese
Instructions:
Preheat oven to 350 degrees.
Cook lasagna noodles according to package instructions. Because they will be baked after being filled, it is okay to leave them a little undercooked. Remove lasagna noodles from water and lay flat to cool.
While lasagna noodles are cooking and cooling, chop and steam the fresh spinach. Remove the spinach from the liquid and drain well. Let spinach cool.
Mix the Parmesan cheese, ricotta cheese, and spinach together in a medium size bowl.
Whisk egg and add it to the cheese mixture. Stir together well.
Add cooled spinach to egg and cheese mixture.
Lay a lasagna noodle out flat and spread the spinach/egg/cheese mixture onto the noodle, staying back from the edges a bit.

Roll the noodle up and cut in half. Each roll up should have one straight edge and one ruffle edge.

Add a teaspoon of marinara sauce to the top of each spinach roll.

Top the lasagna rolls with a sprinkle of mozzarella cheese and bake for 18-20 minutes in the preheated oven.
Remove lasagna rolls from the oven and serve warm with extra marinara sauce!
These can also be made with other fillings and left as a whole noodle rather than cut in half for a larger serving.
