Live WHOLEheartedly: Easy Chicken & Broccoli Cheese Divan

I have been telling you about the Safeway/Randalls Live Whole Heartedly program. They teamed up with Kellogg’s and Campbell’s to bring you good recipes, healthy living and a better lifestyle.

This week I wanted to highlight the Quick & Easy Chicken Broccoli Cheese Divan. Here’s a smart idea for a mouthwatering casserole the whole family will love. Convenience products like canned chicken, broccoli cheese soup and frozen broccoli make this delicious dish really easy to make. I found that even my little kids really enjoyed it!

Ingredients:

1 pound fresh broccoli, cut into spears or 1 package (10 ounces) frozen broccoli spears, cooked and drained
1 can (12.5 ounces) Swanson® Premium White Chunk Chicken Breast in Water, drained
1 can (10 3/4 ounces) Campbell’s® Condensed Broccoli Cheese Soup (Regular or 98% Fat Free)
1/3 cup milk
1/2 cup shredded Cheddar cheese (about 2 ounces)
2 tablespoons dry bread crumbs
1 tablespoon butter, melted

Directions:Place the broccoli and chicken into a 9-inch pie plate. Stir the soup and milk in a medium bowl. Pour the soup mixture over the broccoli and chicken. Sprinkle the cheese over the soup mixture. Stir the bread crumbs and butter in a small bowl. Sprinkle the bread crumb mixture over the cheese. Bake at 450°F. for 20 minutes or until the cheese is melted and the bread crumb mixture is golden brown.

Recipe Tips:Serving Suggestion: Serve with sliced ripe tomatoes topped with chopped fresh basil and balsamic vinaigrette. For dessert serve a vanilla-chocolate chip parfait: layer vanilla pudding with crumbled chocolate chip cookies drizzled with chocolate syrup.

Chicken Broccoli Mushroom and Brown Rice Bake

From: Campbell’s KitchenPrep: 10 minutesBake: 45 minutesServes: 4

This can’t-miss combination of chicken, mushrooms and brown rice are brought together with convenient garden broccoli soup to make a family pleasing baked dish.

Ingredients:1 carton (18.3 ounces) Campbell’s® V8® Garden Broccoli Soup
1/4 cup water
3/4 cup uncooked instant brown rice
4 ounces mushrooms, sliced (about 1 1/2 cups)
1 large onion, chopped (about 1 cup)
1 1/4 pounds skinless, boneless chicken breast halves
Paprika
Ground black pepper

Directions:Heat the oven to 375°F. Stir the soup, water, rice, mushrooms and onion in a 2-quart shallow baking dish. Top with the chicken. Sprinkle the chicken with the paprika and black pepper. Cover the baking dish. Bake for 45 minutes or until the chicken is cooked through and the rice is tender.

Sad news is that while we were at Randalls (Safeway store) we somehow lost 2 Blockbuster movies, which is not frugal at all!! I have not had the stomach to look, but if I remember right it will cost us about $50. I am soooo sick about it. What a mess.
