Can you believe that summertime is already here? I know the kids have been out of school for over a week and we have been none stop on the go. Between Softball, Gymnastics and all the other events and activities we have going on during the week, lunch is sometimes the last thing I am thinking about. I love that we can whip up a box of Velveeta Shells and Cheese it makes the perfect snack or meal and the kids love it.
Times have changed since I was younger, I think they had only one flavor and that was original. Now they have everything from Queso Blanco to Broccoli and even Rotel Shells and Cheese. I had to laugh when I saw this Velveeta Shells and Cheese Bacon. I was just having a conversation with a friend this week about how everything has bacon in it, even cupcakes.
We went with the original classic Shells and Cheese, that way we can dress it up just the way we want. I asked the kids what they wanted in their Velveeta Shells and Cheese, and I kid you not, one of the boys said “bacon”. Well I think we figured out exactly why we are headed toward a bacon revolution. Unfortunately, I didn’t have bacon in the house but I wanted to add some extra protein so I decided to improvise with leftover chicken and broccoli.
While I was boiling the water for the macaroni, I cut the chicken and broccoli up and then it was all done, I just mixed them altogether. It was a great summertime lunch. I love that it only took a few minutes and the kids loved it. Even your pickiest eaters can’t complain about broccoli that is covered in Velveeta cheese.
The beauty of Velveeta Shells and Cheese is that you can fix it any way you want it, to the liking of your kids or the leftover in the frig.
