Start by coving a jelly roll pan with foil AND spray with pam. Believe me you want to do this! Cover the entire tray with a layer of saltines salt side up.
Next make the butter and sugar mix. In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes.
Pour butter mix over the crackers and place in oven for just about 5 min. or until brown and bubbly.
As soon as it comes out, sprinkle the chocolate chips over the top. They will melt, just give them a second, they get all soft and yummy!
When the chocolate chips are all melted, I took a spatula and smoothed out the top. Now, let them cool.
When they are completely cool, break or cut them into pieces. Sprinkle with pecans if you want at this point. We were out, so I left them without and I don’t think that anyone cared!
Oh, my goodness, it is impossible to eat just one! It is also the easiest candy I have ever made!
Saltine Toffee Cookies
Ingredients
- 4 ounces saltine crackers
- 1 cup butter
- 1 cup dark brown sugar
- 2 cups semisweet chocolate chips
- 3/4 cup chopped pecans
Directions
- Preheat oven to 400 degrees F (205 degrees C).
- Line cookie sheet with saltine crackers in single layer.
- In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread to cover crackers completely.
- Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

I really LOVE the recipes that you post!! BUT they seem to be less on the diet friendly side lately 🙂 I am a sucker for sweets! When I make stuff like this I cannot stop eating it!! LOL

Yes it was yummy! We also made your chicken enchiladas recipe but with the pork that was on sale at kroger last week after it sat in the slow cooker all day!! They were sooo good! I might just make this one too and take it to work lol there are only two of us at my house
