The weather this week is beautiful! I want to spend as much time outside as I can before it gets too hot! For me this means easy meals of sandwiches and salads and even grilling out!

MONDAY – Crock Pot Buffalo Chicken Sandwiches {Crock Pot from Moonlight & Star Cafe} - This is one of those that you can put in early in the day and it is ready for you at night! You will probably have all the ingredients on hand. Crack open a bag of chips and some fruit or salad and you have an easy dinner!

TUESDAY – Chicken Florentine Pasta from The Pioneer Woman - This looked perfect for a light dinner, with just enough meat for my husband to not complain! It is fresh and my kids will eat it!

WEDNESDAY – Tuna Waldorf Salad from Running to the Kitchen – If you are scared of tuna, you might want to give this one a shot! It is really more like a chicken salad, but absolutely wonderful! I made this last week for lunch to take to work and ended up eating it for dinner as well!

THURSDAY – Easy Homemade Hamburger Helper  from Michelles Tasty Creations - Hamburger helper is easy but not all that good for you with the additives. Here  is a homemade version that is a little better for you!

FRIDAY – Oven Fried Chicken Tenders from Spicy Richmond – This is a recipe that I have wanted to try for a long time. I have done a lot of coated chicken before, but the honey mustard was a really nice touch!
