<p><strong>Roast Beef Sammie&#8217;s &#8211; serves 5-6</strong><br />
2lb deli sliced roast beef<br />
1-12pk kings hawaiian sweet rolls<br />
1 7-8oz pk sliced provolne cheese<br />
1 14oz can beef broth/stock<br />
1pk lipton onion soup mix<br />
cooking spray</p>
<p>1) Combine onion soup mix with beef broth and marinade roast beef in refrigerate 1-4 hours.<br />
2) Preheat oven 350 degrees and spray 13&#215;9 baking dish with cooking spray and set aside<br />
3) Separate rolls in half lay bottoms in baking dish<br />
4) Add roast beef then top with cheese -reserve broth for dipping<br />
5) Replace the top of rolls<br />
6) Bake 15-20 minutes until cheese is melted completely</p>

<p style="padding-left: 30px;"><em>My daughter and I had just finished a salad at Neiman-Marcus Cafe in Dallas &amp; decided to have a small dessert. Because both of us are such cookie lovers, we decided to try the &#8220;Neiman-Marcus Cookie&#8221;. It was so excellent that I asked if they would give me the recipe and the waitress said with a small frown &#8220;I&#8217;m afraid not.&#8221; Well&#8221; I said, &#8220;would you let me buy the recipe?&#8221;</em></p>
<p style="padding-left: 30px;"><em>With a cute smile, she said YES&#8221;. I asked how much and she responded, &#8220;Only two fifty, it&#8217;s a great deal!&#8221; I said with approval, &#8220;just add it to my tab&#8221;.. Thirty days later, I received my VISA statement from Neiman-Marcus and it was $285.00. I looked again and remembered I had only spent $9.95 for two salads and about $20.00 for a scarf. As I glanced at the bottom of the statement, it said, &#8220;Cookie Recipe &#8211; $250.00&#8243;. That&#8217;s outrageous!!!</em></p>
<p style="padding-left: 30px;"><em>I called Neiman&#8217;s Accounting Dept. and told them that the waitress said it was &#8220;two-fifty,&#8221; which clearly does not mean &#8220;two hundred and fifty dollars&#8221; by any POSSIBLE interpretation of the phrase. Neiman-Marcus refused to budge.. They would not refund my money, because according to them, &#8220;What the waitress told you is not our problem. You have already seen the recipe &#8211; we absolutely will not refund your money at this point.&#8221; I explained to her the criminal statutes which govern fraud in Texas. I threatened to refer them to the Better Business Bureau and the State&#8217;s Attorney General for engaging in fraud. I was basically told, &#8220;Do what you want, we dont give a damn, and we&#8217;re not refunding your money.&#8221; I waited a moment, thinking of how I could get even,or even try to get any of my money back. I just said, &#8220;Okay, you folks got my $250.00, and now I&#8217;m going to have $250.00 worth of fun.&#8221;</em></p>
<p>This story is an <a href="http://urbanlegends.about.com/od/fooddrink/a/cookie_recipe.htm" target="_blank">urban legend</a>, but it is really a lot of fun, and the cookies just might possibly be worth $250! The trick is pulling them out BEFORE you think they are done and letting the cool for a few minutes on the cookie sheet. Then transferring them to the cooling rack or counter. Also, don&#8217;t skip the oatmeal part. I blend it up in my Vitamix or blender and it really gives them a special taste. I find that they get crumbly fast and so store them in a container quickly that is sealed! You won&#8217;t be sorry that you tried theses!</p>

<h3><strong>Neiman Marcus Chocolate Chip Cookie Recipe</strong></h3>

<p>(Recipe may be halved):<br />
2 cups butter<br />
4 cups flour<br />
2 tsp. baking soda<br />
2 cups granulated sugar<br />
2 cups brown sugar<br />
5 cups blended oatmeal (measure oatmeal and blend in blender to a fine powder)<br />
24 oz. chocolate chips<br />
1 tsp. salt<br />
1 8 oz. Hershey bar (grated)<br />
4 eggs<br />
2 tsp. baking powder<br />
3 cups chopped nuts (your choice)<br />
2 tsp. vanilla</p>
<p>Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey bar and nuts. Roll into balls and place two inches apart on a cookie sheet..Bake for 10 minutes at 375 degrees. Makes 112 cookies.. Have Fun!!!</p>

<h3>Oreo Fudge Brownies</h3>
<p>1 box Brownie Mix<br />
eggs &amp; oil<br />
1 heaping half cup (6 oz) Cookies &amp; Cream ice cream<br />
1/4 Cup hot fudge topping</p>
<p>Preheat oven &amp; spray an 8×8 baking dish generously with cooking spray. Combine brownie mix, eggs, and oil as directed on the back of the box, but do not add the water. Add ice cream and hot fudge to the brownie batter and stir to combine. Pour half of the brownie batter into the baking dish, layer with Oreos, then top with remaining batter. Bake for 40-50 minutes or as directed on the back of the box.</p>

I am not heating up the grill but using my <a href="http://www.amazon.com/dp/B0009XAHAG/ref=as_li_ss_til?tag=mylofsix-20&amp;camp=0&amp;creative=0&amp;linkCode=as4&amp;creativeASIN=B0009XAHAG&amp;adid=0ZMCNQGN7D7HVAG11XZ2" target="_blank"><strong>Grill Pan HERE</strong> </a>that I love! We will have a salad and probably apple sauce for the sides. Plus there are a lot of coupons that came out this weekend for the ingredients!</p>
<p><strong>Tuesday -</strong> Sloppy Joes or Manwiches &#8211; I prefer to make my own Sloppy Joes!</p>
<p><strong>Wednesday</strong> &#8211; <strong><a href="http://cleverlyinspired.blogspot.com/2011/02/angel-chickenslow-cooker.html" target="_blank">Angel Chicken</a> - </strong>I couldn&#8217;t totally skip chicken this week!  I have wanted to try this recipe forever and so I can&#8217;t wait! All you need is some brown rice and maybe a salad!</p>
<p><strong>Thursday &#8211; <a href="http://allrecipes.com/Recipe/Stuffed-Peppers-4/Detail.aspx" target="_blank">Stuffed Bell Peppers</a> &#8211; </strong> If you think your kids won&#8217;t like this, just serve them the filling inside the peppers. I have not met a kid that doesn&#8217;t like hamburger and rice! Serve with mashed potatoes as a side or salad.</p>

<h3>Sloppy Joe Recipe from my Grandma Davis</h3>

<li>1 lb ground beef</li>
<li>2 -3 stalks celery , chopped</li>
<li>1 small onion , chopped</li>
<li>1 (8 ounce) can tomato sauce</li>
<li>1/4 cup ketchup</li>
<li>1/4 cup barbecue sauce</li>
<li>1 tablespoon firmly packed brown sugar</li>
<li>1 teaspoon yellow mustard</li>
<li>salt and pepper</li>
<li>1 tablespoon Worcestershire sauce</li>
<li>1 tablespoon vinegar</li>
</ul>

<li>In a large skillet, brown ground beef, celery and onion.</li>

<div>Drain the fat.</div>

<div>Stir in remaining ingredients, simmer covered, 15-20 minutes, stirring occasionally.</div>

<h2>Oreo chocolate truffles</h2>
<p>1 Package Oreos<br />
1/3 to 1/2 cup chocolate cream cheese spread (<a href="http://strk.enlnks.com/aff_c?offer_id=118&amp;aff_id=1158&amp;url_id=103&amp;aff_sub5=17324189&amp;affsrc=1" target="_blank">coupon HERE</a>)<br />
8 ounces dipping chocolate</p>
<p>You start with a package of Oreos, do NOT use double stuff. Next, blend the entire package of cookies in a food processor until crumbs, combine with cream cheese spread into a doughy consistency. Next, take the &#8220;dough&#8221; from the food processor and roll into balls and place on a cookie sheet. I like to use a small melon baller or little cookies scoop so all my truffles are the same size. Melt  (8oz.) packages of Bakers baking chocolate in a double boiler (if you have one, I don&#8217;t) and dip the truffles in the melted chocolate and put them on a new tray. I use the smallest sauce pan I have, with a fork and spoon I roll the truffle in the chocolate, lift it out with the fork and shake the extra chocolate off. Occasionally I have to put the truffles back in the freezer to set up a little more before covering in chocolate. Place on a parchment lined baking sheet that fits in your refrigerator. Repeat with remaining balls chocolate. Cool in refrigerator until chocolate coating is set.</p>

1/2 cup butter or margarine, softened<br />
1 egg<br />
3 tablespoons Gold Medal® all-purpose flour<br />
1/3 cup jam<br />
1 cup white vanilla baking chips<br />
Red or green sugar, if desired</p>

<li>1Heat oven to 375°F. In large bowl, stir cookie mix, butter, egg and flour until dough forms.</li>
<li>2Roll dough into 3/4-inch balls; place 2-inches apart on ungreased cookie sheet. Using thumb or handle of wooden spoon, make indentation in center of each cookie. Spoon about 1/4 teaspoon jam into each indentation.</li>
<li>3Bake 8 to 10 minutes or until edges are light golden brown. Cool 5 minutes; remove from cookie sheet to wire rack.</li>

<h3>Deep Dish Pizza Crust</h3>
<p>Yield: One 9-inch deep dish pizza (3-4 servings)</p>
<p>1 1/2 cups + 2 tablespoons all-purpose flour<br />
1/4 cup yellow cornmeal<br />
3/4 teaspoon salt<br />
1 teaspoon sugar<br />
1 1/8 teaspoon instant yeast<br />
1/2 cup + 2 tablespoons water, at room temperature<br />
1 1/2 tablespoon unsalted butter, melted</p>
<p>1 teaspoon olive oil<br />
2 tablespoons unsalted butter, softened</p>
<p>Instructions:<br />
Whisk together the flour, cornmeal, salt, sugar and yeast in the bowl of a stand mixer, until well blended.  Attach the dough hook and mix in the water and melted butter on low speed for 1 to 2 minutes.  Scrape the sides and bottom of the bowl as needed.  Increase the speed to medium-low and knead until the dough is glossy and smooth, about 3 to 4 minutes.</p>
<p>Coat a medium bowl with 1 teaspoon of the olive oil.  Transfer the dough to the bowl, turning once to coat with oil.  Cover tightly with plastic wrap and let rise at room temperature until nearly doubled, about 45 to 60 minutes.</p>
<p>Once dough is risen, turn it out onto a dry work surface and roll into an 8- x 6-inch rectangle.  To laminate the dough, spread the softened butter over the surface, leaving a 1/2-inch border around the edge.  Starting at the short end, roll the dough into a tight cylinder.  With the seam side down, flatten the cylinder into a 9- x 2-inch rectangle, then fold into thirds like a business letter.  Pinch the seams to form a ball, and return to the oiled bowl.  Cover tightly again with plastic wrap and let rise in the refrigerator for 40 to 50 minutes.</p>
<p>Preheat oven to 425?F.  Coat a 9-inch round cake pan with olive oil.  Move the dough to a dry work surface and roll out into a 13-inch disk about 1/4-inch thick.  Carefully transfer the dough to the pan and lightly press to line the bottom of the pan and 1 inch up the sides.  If the dough resists stretching, wait 5 minutes before trying again.</p>
<p>Sprinkle the shredded Mozzarella over the surface of the dough, then layer the sauce over the cheese.  Top with Parmesan and bake for 20 to 25 minutes, until crust is golden brown.  Let rest for 10 minutes before slicing.</p>

<li>4 teaspoons vanilla extract</li>
<li>3 cups all-purpose flour</li>
<li>3 cups whole wheat flour</li>
<li>6 teaspoons ground cinnamon</li>
<li>2 teaspoon baking soda</li>
<li>1/2 teaspoon baking powder</li>
<li>2 teaspoon salt</li>
<li>1 cup chopped walnuts ( I don&#8217;t put any in)</li>

<h4>INGREDIENTS</h4>

<li>7 cups Chex Cereal</li>
<li>I package dry Ranch dressing</li>
<li>1 egg</li>
<li>1 cup fat-free milk</li>
<li>1 cup all-purpose flour</li>
<li>1/2 teaspoon salt</li>
<li>1/4 teaspoon pepper</li>
<li>3 pounds chicken pieces, (without or with skin) rinsed and dried</li>
<li>3 tablespoons margarine or butter, melted</li>
</ul>
<h4>DIRECTIONS</h4>
<p>1. Place Chex cereal in shallow dish or pan and crush until fine.</p>
<p>2. In medium mixing bowl, beat egg and milk slightly. Add flour, salt and pepper. Mix until smooth. Dip chicken in batter. Coat with dry ranch dressing ( I put mine in a baggie and shake the chicken in it) Then coat with cereal. Place in single layer, in shallow baking pan coated with cooking spray or foil lined. Drizzle with margarine.</p>
<p>3. Bake at 350° F about 1 hour or until chicken is tender, no longer pink and juices run clear. For food safety, internal temperature of the chicken should reach at least 165ºF. Do not cover pan or turn chicken while baking. Serve hot.</p>

<ul>
<li>1/2 cup butter</li>
<li>1 cup Nutella (coupon <a href="https://www.facebook.com/nutellausa?sk=app_305435402810840" target="_blank">HERE</a>)</li>
<li>3/4 cup chocolate chips (use semi-sweet or dark, milk would be far too sweet and you’d lose the chocolate flavor)</li>
<li>3/4 cup white chocolate chips</li>
<li>2/3 cup hazelnuts</li>
<li>13 cups (more or less) or one 12oz box of hearty wheat/corn/rice cereal like Crispix or Chex – try to find a hearty version so it doesn’t break down when stirring</li>
<li>3 cups powdered sugar</li>
</ul>
<div>In a 350 degree preheated oven, roast hazelnuts until fragrant and light brown, about 8 minutes</div>
<div>Allow to cool and remove as much of the skin as you can with a towel</div>
<div>Grind up hazelnuts finely in a food processor</div>
<div>Put the cereal in a large bowl and set aside.</div>
<div>In a pan over medium-low heat, melt butter, chocolate, and white chocolate, stirring constantly.</div>
<div>When all is melted, remove from heat and add Nutella and stir until mixed in, then add hazelnuts and stir well.</div>
<div>Slowly pour over cereal.</div>
<div>Stir with your hands! (make sure they are clean first!) It is MUCH easier than with a spoon.  It may take some time since the the batter is thick.</div>
<div>Dump into a gallon size zip-lock bag and pour in powdered sugar. Start out with a little and add more as needed.  You don&#8217;t want them TOO coated with powdered sugar because they will end up tasting to sweet. Zip up the back and shake it until they are coated.</div>

<p>It wasn’t until I was in college that I tried freezer jam. Can you believe I had lived my entire life until then without any? Crazy. I would like to take a minute to thank my roommates, it was either Cami, or Chelsea who brought some from home and changed my bagel eating life. This was my staple meal while in school, a plain toasted bagel, with slightly melted plain cream cheese and piled with strawberry freezer jam.</p>
<p>When strawberries are in season you can pick some up for only $.99/lb. This is a great price to pick up extra and make a batch to stick in the freezer.</p>

<div>This is the easiest yummiest most satisfying thing that you can preserve. Take the tops off your strawberries. Toss them into your food processor or a large bowl. Pulse them slowly until they are in small chunks, or mash with a potato masher until smashed. {stick the kids at the table with something to do!}</div>

<div>This is super quick to make, abut 40 minutes and 9 pounds of strawberries later I had this stash to throw into the freezer. Enough to last us for the next few weeks…. just kidding the  next month or so <img src="http://mylitter.com/wp-includes/images/smilies/icon_smile.gif" alt=":)" /> It will last up to a year in the freezer or a month or so in the fridge.</div>

<li>2 cups sugar</li>

<li>3/4 cup water</li>
</ul>

<li>Mix crushed strawberries with sugar, and let stand for 10 minutes. Meanwhile, stir the pectin into the water in a small saucepan. Bring to a boil over medium-high heat, and boil for 1 minute. Stir the boiling water into the strawberries. Allow to stand for 3 minutes before pouring into jars or other storage containers.</li>
<li>Place tops on the containers, and leave for 24 hours. Place into freezer, and store frozen until ready to use.</li>

<p>2 cups Bisquick<br />
1/2 cup sour cream<br />
1/2 cup 7-up<br />
1/4 cup melted butter</p>
<p>Cut sour cream into biscuit mix, add 7-Up. Makes a very soft dough.<br />
Sprinkle additional biscuit mix on board or table and pat dough out. Cut biscuits into squares about 3&#215;3. Melt 1/4 cup butter in a 9 inch square pan. Place cut biscuits in pan and bake at 450 degrees until golden brown.</p>

<p>Is anyone tired of Ham yet? This is my Grandmothers recipe for Lemon BBQ Meatloaf. It is a really special recipe to me, just because she made it all the time for me when I was living with her as a teenager.  My Grandma Davis clipped it out of the local paper during World War II and has been making it since. She still has the original clipping that she reads the recipe off of, it is stained and yellowed, but it is precious to me.</p>

<p>This recipe was intended for you to make it as small individual meatloaves.  If I was making this for adults I would make them about the size of a large baking potato. But I double the recipe and make them about the size of a regular orange for my kids. Sometimes my husband and bigger kids have 2 each!</p>

<p>When I make these meatballs I cover a cookie sheet that has sides with foil to make clean up easier. I also set a wired cooling rack over the cookie sheet and put the meatballs on it so that the grease drips onto that and they don&#8217;t sit in it. It also makes clean up really easy!</p>
<p>When you try these the first time, DO NOT omit anything from the sauce recipe. That is what makes them so good! My husband made these one time and left out the spices because he doesn&#8217;t like them. Then he complained that it didn&#8217;t taste as good! He was surprised to know that I always put the spices in that he thought he didn&#8217;t like! <img src='http://mylitter.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<h3>Lemon Barbeque Meatloaf</h3>
<p>INGREDIENTS</p>
<p>1 1/2 pounds ground beef<br />
1/4 cup lemon juice<br />
1/2 cup water<br />
1 egg, beaten<br />
4 slices day-old bread, torn into small pieces<br />
1/4 cup chopped onion<br />
2 teaspoons seasoning salt<br />
1/2 cup ketchup<br />
1/3 cup brown sugar<br />
1 teaspoon mustard powder<br />
1/4 dash ground allspice<br />
1/4 teaspoon ground cloves<br />
6 slices lemon</p>
<p><strong>DIRECTIONS</strong></p>
<p>Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish or a dish of similar size.</p>
<p>In a large bowl, mix together the ground beef, lemon juice, water, egg, bread, onion and seasoning salt until well blended. Shape into 6 individual loaves – I like to make large balls. Place them in the prepared baking dish.</p>
<p>Bake for 15 minutes in the preheated oven while you prepare the topping. In a small bowl, stir together the ketchup, brown sugar, mustard powder, allspice and cloves. Spoon the sauce over the loaves, then top each one with a slice of lemon. Return to the oven, and bake for an additional 30 minutes, or until cooked through.</p>

<h3>Ham and Scalloped Potatoes Slow Cooker Recipe!</h3>

<p>6cups cubed (1-inch) peeled baking potatoes<br />
1 1/2cups cubed cooked ham<br />
1can (15.25 oz) Green Giant® whole kernel sweet corn, drained<br />
1/4cup chopped green bell pepper<br />
2teaspoons instant minced onion<br />
1can (10 3/4 oz) condensed Cheddar cheese soup<br />
1/2cup milk<br />
2tablespoons all-purpose flour</p>
</div>
<h3>Directions</h3>
<ol>
<li>In 3 1/2 to 4-quart slow cooker, combine potatoes, ham, corn, bell pepper and onion; mix well.</li>
<li>In small bowl, combine soup, milk and flour; beat with wire whisk until smooth. Pour soup mixture over potato mixture; stir gently to mix.</li>
<li>Cover; cook on Low setting 7 to 9 hours or until potatoes are tender.</li>
</ol>
<div><strong>Alternative to condensed cheddar soup:</strong></div>
</div>
<p>3 tablespoons butter<br />
3 tablespoons all-purpose flour<br />
1 cup milk<br />
1 cup shredded cheddar cheese<br />
salt, to taste</p>
<p>Melt butter in a saucepan over medium-low heat; add flour and whisk until smooth and bubbly. Remove from heat; gradually add milk, whisking to keep smooth. Return to heat and bring to a gentle boil, whisking constantly until thickened. Add cheese and stir until melted. Add salt.</p>

<p>This is the recipe that we had for Easter dinner that I posted about earlier today.</p>
<p>Often, I end up getting the generic brand canned fruit because many times it is cheaper than with a coupon. I even keep the cans in the fridge so they are cold and toss it together right before we eat!</p>

<h3>Cherry Pie Filling Salad</h3>
<h3>Ingredients</h3>
<ul>
<li>1 can (28 ounces) fruit cocktail, drained</li>
<li>2 cans (11 ounces <em>each</em>) mandarin oranges, drained</li>
<li>1 can (20 ounces) unsweetened pineapple chunks, drained</li>
<li>1 can cherry pie filling</li>
<li>2 cup grapes</li>
<li>2 sliced bananas</li>
</ul>
<h2>Directions</h2>
<ul>
<li>In a large bowl, combine the fruit salad, oranges, pineapple and pie filling. Add the sliced bananas, and grapes, stir gently. Refrigerate leftovers.<strong> Yield: </strong>10 servings.</li>

<h3>Funeral Potatoes</h3>
<p>Ingredients:</p>
<ul>
<li>6 c. diced potatoes<strong> (OR use a 1. lb bag of frozen hash brown potatoes!)</strong></li>
<li>1 can (10 3/4 oz.) condensed cream of chicken soup</li>
<li>1/2 stick butter, melted</li>
<li>1/2 c. milk</li>
<li>1 c. sour cream or plain Greek yogurt</li>
<li>2 c. grated cheddar cheese, or use a mix of cheddar and gruyere</li>
<li>1/4 c. grated onion (optional)</li>
<li>Salt and pepper to taste</li>
<li>3/4 c. crushed cornflakes or panko bread crumbs (optional for crumb topping)</li>
<li>Additional 2 T. butter (optional for crumb topping)</li>
</ul>
<p id="rP">Preparation:</p>

<li>Prepare the potatoes: Scrub 6-8 medium russet potatoes and wrap in foil. Bake the potatoes in a 350 degree oven for 45 minutes to 1 hour, or until they are easily pierced with a fork but not too tender. When the potatoes are cool enough to handle, peel and dice them. If you want, you can substitute plain frozen diced (not shredded) potatoes. Let the potatoes thaw before using them in the recipe.</li>
<li>Combine soup, butter, sour cream or yogurt, milk, cheese, onion, salt and pepper in a large mixing bowl. Mix well. Add the diced potatoes and stir gently until combined.</li>
<li>Place potato mixture in a 2-3 quart casserole dish or 9 x 13-inch baking pan.</li>
<li>Optional: Mix 2 T melted butter with crushed corn flakes or panko bread crumbs. If using panko, season with a little salt and pepper. Sprinkle crumb mixture over potato mixture.</li>
<li>Bake uncovered at 350 degrees for 30-45 minutes or until hot and bubbly.</li>
</ol>

8 oz. carton Cool Whip<br />
15 oz. can mandarin oranges (drained)</div>

<h3>Fruit Crumb Bars</h3>
<p>2 cup2 white sugar<br />
1 teaspoon baking powder<br />
3 cups flour<br />
1 cup cold butter<br />
1 egg<br />
1/4 teaspoon salt<br />
Zest and juice of one lemon<br />
4 cups fresh fruit ( I used strawberries)<br />
4 teaspoons cornstarch</p>
<p>Preheat the oven to 375 degrees. Grease a 9×13 inch pan. In a medium bowl, stir together 1 1/2 cup sugar, 3 cups flour, and baking powder. Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.</p>
<p>In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the fruit. Sprinkle the fruit mixture evenly over the crust. Crumble remaining dough over the berry layer.</p>
<p>Bake in preheated oven for 45 minutes, or until top is slightly brown. Let cool and cut into squares!</p>
